Stumbled upon this scene while exploring Toa Payoh Lor 8 Hawker Centre this cool Sunday morning. It's Singapore's 50th National Day. The hawker centre seemed relatively quiet today but Seletar Sheng Mian stall 实里达生面·面粉粿 still commanded a 20 minute queue.

Stall holder Ah Seng was extremely busy but graciously paused for a quick hello and photo 😄

The stall is called Seletar Sheng Mian Mee Hoon Kway because it was founded at the now demolished Seletar market. Ah Seng have been here in Toa Payoh for 8 years now. (Seletar market had been gone 8 years already?! How time flies.... I spent a year of my youth on military training in nearby Seletar Camp.)

We ordered a mee hoon kway, soup version.

I thought this is pretty generous for SGD3. A good size fresh prawn, fresh lean pork slices, crispy ikan bilis (anchovy), a splash of egg white, a few greens, and many pieces of "kway" in a large bowl of bone and anchovy broth.

The first thing that struck me was the kway (or kueh).

Actually, this was the first time I ever came across a mee hoon kway stall where the kway is completely hand made with bare hands - exactly like the way it's done in Hokkien family homes (MHK is a Hokkien comfort dish). The flour dough was kneaded, smacked, stretched, pulled and torn with bare hands - not even a hand rolling pasta machine was used.

Each piece is thus unique, every one with its own shape and even variations in thickness. The mouth feel is therefore interesting as we encounter a different tender QQ bite with each chew.

The pork bone and anchovy broth was mainly savoury and salty with slight anchovy umami flavour. Bits of minced pork and fat floating in the broth added a little hint of sweetness. Little, if any MSG.

I like Seletar Shen Mian 实里达生面·面粉粿 mainly for the hand made kway. Next time, I shall be back for the "dry" version and their "sheng mian" (noodles).
