I love eating ramen like crazy. So, when I heard that Ramen Taisho which serves artisanal ramen just opened 3 days ago at the NTUC Foodfare food court in Clementi Mall, I rushed to try it :-D

As I was alone, I ordered just the "Chef's Favourite Ramen Deluxe". It's a very good ramen and it is hard to beat for value at SGD8.90 nett. (There is a regular version at SGD6.90 nett.)

The slender house made wheat noodles were cooked soft al dente. If you like your noodles to have a light spring to the bite, then you will like Ramen Taisho's noodles.

The pork and chicken broth is full bodied with a slight slick on top. The savoury sweet porcine flavour is robust and nicely well balanced. It's a very good broth, especially if you like your ramen soup rich and kaw kaw 厚 (thick).

The "Ramen Deluxe" comes with 5, yes F.I.V.E. slices of chashu pork - no wonder it is also called the meat lover's ramen.

The thin slices of chashu pork are big on sweet savoury porcine flavours. The texture is a blend of tender juicy lean meat and "watery / cui cui 水水" fat with a skinny layer of soft skin on the fringe. I like this chashu (though I prefer them in thicker slices).

Tamago or lava eggs, even at big name ramen shops are sometimes a hit or miss thing.

So, it is really commendable that at Ramen Taisho, they got it spot on right from the word go - softly firm egg white and runny golden yolks.

Ramen Taisho is the newborn of Hock Soon, who runs the stall with his wife Kalene and son.

The baby came out strong and healthy after a three year gestation.

Hock Soon spent three years travelling back and forth between Singapore and Japan to learn his trade before launching Ramen Taisho. He attended courses and training in Japan, learning the technical aspects and the science of ramen. He attended classes that teach the business of ramen. And, he then followed the old ramen grand masters to learn the art of ramen. Back in Singapore, Hock Soon attended the Street Food 360 course (街食专家) by Makansutra. Hock Soon's got everything covered - that's 360 preparation indeed :-D

And, now Ramen Taisho is born strong. The baby requires lots of tender loving care to grow.

Every night after closing the stall at 10:00pm, Hock Soon makes the noodles at the stall using wheat flour imported from Japan. So, the next morning, customers get to enjoy freshly made noodles. Everything else like the chashu pork and tamago eggs are also house made at the stall.

Just three days into the business (the opening bouquets are still fresh) and Ramen Taisho already attained this standard of ramen - I think Ramen Taisho is off to a flying start. Just imagine what we will get when Hock Soon smooths out all the processes and Ramen Taisho rows at full steam. I am sure Singapore ramen lovers are in for a big treat.

Ramen Taisho is the first stall on the left at NTUC Foodfare as you enter the food court. It's a very clean and comfortable place for a casual meal.

    just for the info,on the 6th floor of city square jb,theres a newly opened japan street food court.which i think u have been invited..like to see a review of there,somewhat "sg" pricing imo

  6. My 3rd visit. This time round I ordered the $8.90 portion. There was not enough soup. I went back to ask for more soup as there are more noodles than soup. To my disappointment, the lady said no. They don't give more soup. Strictly one ladle she said.

  8. The stall at Clementi Mall is now closed. I went a few days ago to try it and the stall has been vacated and there was a sign that said "New stall coming". They are changing to a new location, according to their Facebook page.
