Famous Hoe Nam prawn noodles really needs no further introduction - founded in 1971, most Singaporeans would have heard about, if not eaten at Hoe Nam before. I just cannot resist another visit to one of my favourite prawn mee shops in Singapore.

到新加坡去一定要试试河南肉骨大虾面. 这老店自1970年已经非常有名. 他们的招牌菜是大虾面. 新鲜的虾又大又甜. 虾汤厚, 韵味十足. 面条也是不错, 有弹性, 加上美味的酱汁. 在新加坡, 这是值得一去品尝的美食之一. 31, Tai Thong Crescent. 6:30am - 4:30am. 周一休息.

Needless to say, Hoe Nam is full house during lunch time with people from nearby offices descending onto the old shop. So, if you can, off peak is best.

When you step into Hoe Nam, the aroma of prawns is strong in the air like the way the smell of toasty Arabica hangs in the air in good coffee shops.

Hoe Nam has a queue system, we often find in popular Singapore food stalls. When you arrive, go straight to the noodle stall counter, choose your order, pay up and you will be given a number tag. Take this tag and go find a seat. Pay attention to the LED call number display at the counter - just like in a clinic. Go to the counter to collect your food when your number is flashed. Simple and efficient, if a little impersonal. Singapore is like that 😄

Woo... hoo... I indulged in the SGD7.50 set (2016 price). I like that little paper box for throwing the prawn shells - so environment friendly 😊 We do this at home too 😊

There were 5 good size prawns in the bowl of prawn broth. So, for SGD7.50, I think this is good value for money.

I like it that the prawns were shelled, leaving only the head and tail on, so I don't have to struggle with peeling prawn and handling my camera at the same time. The prawns were meaty with a springy crunch and juicy with fresh natural prawny crustacean sweetness.

Hoe Nam's prawn broth is just pow! It's rich with deep robust crustacean savouriness that is addictively drinkable. Pay SGD1 for top ups 😂 but I think it is very fair for top quality broth like this.

The mound of generic yellow noodles sits in a shallow pool of rich tossing sauce.

The noodles were topped with freshly fried shallot - fried at the stall, not factory supplied tasteless stale "wood chips" sold in large plastic sacks. These fried shallots were crispy, aromatic and flavourful. I asked for more, and the friendly auntie tossed another spoonful into my bowl YAY!

The noodles were done soft al dente with a nice gentle spring to the bite - the auntie was really very skilful in cooking the noodles. Each strand was coated with a rich layered savoury slick greasy sauce. The bean sprouts provided some sweet juicy crunch and the fried shallot added loads of aromatic savouriness. This was one delicious bowl of noodles!

Popped a dash of this fiery looking chili powder into the noodles. No worries, it's got neither sting nor bite. 湿水爆竹 wet fire crackers 😛

I am weak, so I couldn't resist another round of noodles, this time with pork tail soup - because it is there 😬 This set for SGD4.50.

The same tremendously delicious noodles and broth, and then there were those irresistible pigtails.

The fat, skin and meat were tender and the porcine sweetness was strong in this one. Not for everyone, but I love these 😋

Stumbled upon this as I was leaving after my scrumptious meal.

So..., this is where the prawny aroma that filled the air came from. They were slow frying prawn shells over a low, caressing orange flame. The auntie at the drinks counter was protesting as I stole this quick snap 📵 Johor Kaki bad...... 😂

4-Star Hoe Nam is still one of Singapore's best prawn noodle shops. Double confirmed. If you are a foodie visiting Singapore, include Hoe Nam in your itinerary.

    1. I understand they operate in 2 shifts. The sisters in the day shift and the brother in the night shift. Best to call them at 6281 9293 before going. Some people say day shift better. Others say night shift better. :-D
