One of the Must Try food at Taiwan Night Markets is 大腸包小腸 - it's a big glutinous rice sausage wrapping a smaller pork sausage. At the famous Shilin Night Market in Taipei, among the best known sausage wrap stalls is 福榕記大肠包小肠.



福榕記大肠包小肠 run by owner 鄭陳榕 has been here serving their famous Big Sausage Wrap Small Sausage for nearly 20 years. Everything from the big glutinous rice sausage 米腸 to the smaller pork sausage 大香腸 is made at the stall from scratch using fresh ingredients.

福榕記 stall uses good quality glutinous rice which are stickier and sweeter to make their sausage. The glutinous rice is cooked by steaming. The steamed glutinous rice is mixed and blended with pork lard crackling and bits of fried mushroom. The glutinous rice, pork lard cracking and fried mushroom bit mixture is flavoured with mushroom stock, pork lard and aromatic shallot oil.

The flavoursome glutinous rice blend is then tightly packed into real pork intestines 腸衣 stretching it to the max to make the plump glutinous rice sausage.

福榕記大肠包小肠 also make their own pork sausages. For this, they use warm body 溫體肉 fresh pork ham that is never chilled, never frozen. (溫體肉 is a luxury not available in Singapore.)

The lean pork ham is minced together with pork fat at 70% / 30% ratio. 福榕記 adds in kaoliang 高粱酒 (sorghum vodka) when grinding the mince pork. Like the glutinous rice sausage, the minced pork is packed snugly into bugling ropes of real pork intestines.

At the night market, the rice and pork sausages are freshly grilled over red hot charcoal.

The charcoal grilled glutinous rice sausage is slitted down along the middle. The split open sausage is given a squirt of sauce, then packed with chopped chai poh 菜脯 (preserved radish) and julienned cucumber. The grand finishing touch is to top it with a grilled sizzling pork sausage.

Fans of 福榕記大肠包小肠 are crazy about the juicy pork sausage and glutinous rice sausage. 福榕記 sausages are packed with robust savoury sweet flavours. The chai poh and julienned cucumber add flavour and juicy crunch to the meaty starchy street snack.
