Shang Ji Braised Duck. Johor Bahru's Biggest Braised Duck Brand 上记



If we go by the number of stalls, the Lim family I believe has the largest braised duck brand in Johor Bahru with 4 stalls under the name 上记. One each at Jalan Lumba Kuda, Old Downtown JB, Taman Ungku Tun Aminah and Taman Johor.



This morning I was at the 上记 stall at Shang Ji kopitiam at Jalan Lumba Kuda again. I had also visited and blogged about the 上记 stall at Taman Johor. I shall track down the remaining 上记 stalls.



The 上记 stalls are run by the Lim brothers - the stall at Shangi Ji by the youngest brother, Ah Tee (which means younger brother in Hokkien language). Ah Tee joked that he is always younger than anyone because everyone calls him "younger brother".

The 上记 brand was founded by Ah Tee's late father who was a banquet caterer. The Lim patriarch switched to braised duck (and pork) about 30 years ago. Now, four Lim brothers are still braised duck and pork hawkers.



I ordered a duck kway teow with slices of duck breast and added in braised pig skin (price RM7 total). The bowl of duck noodles come splashed with a gooey brown sauce and bowl of duck soup.



The kway teow (rice noodles) were well coated with the savoury sweet sauce after a good toss. The kway teow added its sweetness to the savoury sweet sauce - I enjoyed these smooth slurpy noodles.



The slices of duck breast meat were oh... so... tender and juicy. There was a thin strip of fat at the top of each slice. I was able to taste the braised duck's natural sweetness underlying the savoury sweet brown sauce.



This tenderly firm braised pig skin was oh.. so... springy. Pig skin doesn't have much flavour of its own but it took on some of the savoury sweetness from the braising stock - to me eating pig skin is mainly about appreciating the tender springy mouth feel. 上记 is skillful with both braised duck and pork.



Each bowl with duck noodles comes with a small bowl of soup made with all the duck bones stripped from the braised birds throughout the day. (Shang Ji serves its braised duck boneless.) There is really no need to describe how the duck soup will taste 😄 It was gently savoury sweet and just gets better as the day progresses 😋



When I mentioned to Ah Tee that I like juicy fatty cuts, he suggested that I try the thigh next time. Seeing how meaty and juicy the thigh was, I shall definitely be going for succulent legs and thighs next time.

Bumped into Nakamasa Okamoto san at Shang Ji. Okamoto san lives in Singapore and comes into JB often on weekends to hunt for all kinds of noodles. He said that he knows that we are bound to bump into each other one day and so we did today 😄 He gave me many tips on where are the best noodles in JB and Singapore. Thank you!   1. Yes, no doubt this is the best braised duck noodles/rice I have eaten. Their braised tofu is soft and good too. Love the meat that is tender and succulent and not to mention perfectly cut in size. Don't forget to dip it in their homemade chilli sauce. I always get a bowl of chilli sauce cos it's never enough for me. It's just too yummy!
