Whenever Johnny of SZ Kitchen has special fish like Giant Grouper or Moray Eel, he will jio (invite) us to taste it. Every time, Johnny will also throw in a plate of fried chicken wings. We all love the fried chicken wings but have never highlighted it because we were so focused on the special fish. Now, I want to share about SZ Kitchen's fried chicken wings because it is among the best in Singapore.

SZ Kitchen at the ground level of Fairprice Hub is popular for their convenient, affordable set lunch plates.

As Johnny has over 30 years' experience in the F & B industry, he has good contacts in fisheries who occasionally supply him with special fish. Johnny then put this on his menu - ask him about it when you visit.

Today, it was a 200kg giant grouper.

Needless to say, the Giant Grouper was marvellous. Johnny cooked it by stewing with vegetables, ginger, spring onion etc.

At 200kg, the skin of the fish was as thick as a crocodile's hide. But, it is more tender and gelatinous, and had a slight sweetish taste. (Crocodile hide is more chewy and has a subtle fishy taste.)

Giant Grouper meat was like crocodile meat, though slightly more tender and juicy. I prefer the bite of Giant Grouper more than crocodile. Grouper meat is also sweeter (whereas crocodile meat doesn't have any flavour).

But, for this post, I want to share with you SZ Kitchen's excellent fried chicken wings.

The golden brown batter was feather light and crumbly. The crispy batter tasted gently savoury. The chicken meat inside was warm, juicy and had natural chicken sweetness. In the mouth, each bite of this chicken was crispy, juicy and savoury sweet. Johnny learnt the recipe for this fried chicken wings from a hawker in Pekanbaru, Indonesia.

Recommended for you 👉 SZ Kitchen's fried chicken wings are addictive and even got our attention despite the distraction of Giant Grouper, Moray Eel, Batfish etc. They are among the best fried chicken wings in Singapore.

I haven't tried SZ Kitchen's economic lunch plates before but I saw that it is popular with workers from around Joon Koon's Fairprice Hub.

  1. Are the fish he sells farm reared or wild caught?
