Pietro Ristorante Italiano - Italian Restaurant in Singapore
My friend Ian Low (the Silver Chef) invited me together with Nicole, Alvin, Jimmy and Uncle Smart to a pizza making demonstration at Pietro Ristorante Italiano in Singapore.
Pietro Ristorante Italiano is located in a quiet leafy residential neighbourhood off Yio Chu Kang Road in crowded Singapore.
I love this quaint mural which greeted us at the al fresco dining area at the front of Pietro Ristorante Italiano. With enough wine and the right spirit, we might think that we are on a romantic high balcony overlooking gondolas gliding by.
Italian fare with flare and flair by Chef Peter Neo.
Chef owner Peter Neo has over 30 years of culinary experience, learning his craft in Italy - the birth place of pasta and pizza. Peter was Chef di Partie of Raffles Hotel before starting his own restaurant, which he fittingly named after himself, Pietro.
Before we got down to the pizza making demonstration, Peter, always the gracious host, let us try some of the dishes in Pietro Ristorante Italiano's menu.
Peter started us off with pastas, the Italian staple. Pietro Ristorante Italiano make all their own pastas like spaghetti and ravioli from scratch at the restaurant.
The Spaghetti alle Vongole ($20) served with fresh clams and savoury sauce with white wine.
I love the way Chef Peter does pasta which is faithful to the Italian way from his years in Italy. The el dente noodles felt tender outside with slight resistance towards the core as we bite through the noodle strand. It felt stiffer than the lifeless, limp spaghetti at fast food chains.
The classic Spaghetti alla Carbonara ($18) made with egg yolk, bacon and finely shredded parmesan cheese. No cream is used in Pietro's carbonara - staying true to Italian traditions. I enjoyed the el dente spaghetti, given body by rich egg yolk, smoothen by olive oil and flavoured by savoury bacon and hairs of parmesan cheese.
Spaghetti Aglio Olio con Anatra ($24) which is spaghetti with slices of roast duck and garnished with olive oil, chili and garlic. The well executed el dente spaghetti was punctuated with interesting garnish of savoury duck, pungent garlic, mildly stinging chili and everything lubricated by the light olive oil.
Gnocchi con Porcini e Olio al Tartufu ($28)
Pasta pockets stuffed with rich porcini mushroom in a creamy sauce drizzled with truffle oil.
Gnocchi allo Spezzatino de Wagyu ($34)
Italian style wanton - house made pasta pockets indulgently stuffed with Wagyu beef mince in a rich tangy sauce topped with shredded parmesan cheese.
Pollo Impanato con Rosmarino e Salsa al Vino Rosso ($22) or in plain English, whole grilled chicken with Rosemary and red wine sauce. Juicy chicken flavours and tender meat complemented by the zesty sauce.
Pancetta Arrosto ($26)
Chef Peter is very proud of Pietro Ristorante Italiano's Pancetta Arrosto ($26). The pork is steamed, then roasted and served with apple sauce with kidney beans and baked cherry tomatoes.
The slow roasted belly pork had layers of tender savoury flesh with good bite, soft creamy fat, and crackly biscuit-like skin on top. I love this.
Ali Di Pollo Alla Griglia ($16)
Deep fried chicken wings tossed in a tangy savoury sauce.
We finally got down to the pizza making demonstration by Chef Peter.
The pizzas at Pietro Ristorante Italiano are all freshly hand made at the restaurant. This red oven with the gas flame sits prominently at the inside left corner of the dining area.
This is the signature Pizza Pietro :D The crust was slightly dry, and crispy like a big piece of biscuit. On top were mozzarella cheese, house made pork sausages and porcini mushroom.
We wrapped up our 3 hour long tasting session on a sweet note with this Tiramisu. The spongy cake with creamy mascarpone and espresso dipped lady fingers were topped with crushed pistachio nuts. As a coffee lover, I like the deep rich bitter-sweet coffee flavour in Pietro Ristorante Italiano's version of this Italian culinary icon. Of course, I love the coffee liquor in the Tiramisu too :D
Pietro Ristorante Italiano is highly recommended for causal dining with Italian flair.
Parking is limited but the restaurant provides valet service.
