Got here before 8am to avoid the infamous queue.

I've eaten Outram Park's fried kway teow for decades. Then, someone shared a tip only regulars insiders know ๐Ÿคซ Say I should try their fried bee hoon but need to be very early as they have very limited stock of bee hoon (rice vermicelli). So, here I am, up at the crack of dawn for the fried bee hoon. (I forgot who told me about the fried bee hoon. My apologies ๐Ÿ™‡ and thanks for the tip ๐Ÿ™ )


When I told friendly auntie that I wanted fried bee hoon, she said: "Wait a second, let me check if still have", then uttered my order to the boss inside. The 2 seconds of suspense seemed like a very long time ๐Ÿ˜ฑ (I came from Johor very far you know... ๐Ÿ˜… ) It was a huge relief when the boss came back "Have".

My fried bee hoon was ready in minutes once the order was in. When it was fresh off the wok, I could smell the nice aroma of caramelised sauces from the mound of smoking bee hoon.

Fried bee hoon like fried kway teow, of course, is a very humble, austere dish. Outram Park's version only has bee hoon, blood cockles, fish cake slices, egg, bean sprouts and sauces. That's all. (No lup cheong or Cantonese waxed sausage, prawn, chives, etc.)

What makes this char bee hoon so delicious lies solely in the skills of Char Kway Teow Master Ng Chin Chye.

The bee hoon was soft, well moistened and infused with Outram Park's signature sweet savoury sauce. There wasn't much wok hei in the toasty smokey sense but there was no lack of nicely sweet savoury caramelised sauce flavours and aromas. There was neither strong lardy taste nor lard croutons in this morning's fried bee hoon ๐Ÿค”

Fans of Outram Park Fried Kway Teow. Can try out their fried bee hoon for a change, if you happen to be in the Hong Lim / Chinatown area early (before 8am to be safe).

Psst.... Outram Park Fried Kway Teow Mee established in the 1970s is in transition to the third generation now. Master Ng's son is helping out at the stall and frying char kway teow under his dad's tutelage. So, we will have good char bee hoon and char kway teow for another generation.
