Star Pho Le Beef Noodle • A Taste of Vietnam in Geylang

We came to Star Pho Le Beef Noodle in Geylang after chomping down half a duck and a couple of beers in Chinatown πŸ˜‚ It turned out to be a good choice for "early dinner".

Star Pho Le is a simple shop lot eatery which is humbly furnished but bright, clean and comfortable. While in the shop, the aroma of beef hung in the air like good pho shops in Ho Chi Minh City. Most of the folks in the shop, both staff and customers, were Vietnamese. I felt I am in Vietnam again.


The stars at Star Pho Le are their pho (still need to say meh πŸ€” ). Prices are reasonable (just a bit higher than hawker centre).

We started with the signature bowl. It's a bowl of rice noodles in a beefy soup with mixed beef and tendon.

The thick slices of beef brisket were a bit stiff and doesn't have much flavour.

I love the beef tendon as they were soft like jelly with a subtle spring to the bite.

I like the soft, slurpy smooth rice noodles they use at Star Pho Le. The rice noodles picked up the savoury beefy flavours of the soup well, complementing the noodles' natural sweetness. The beefy soup didn't taste like it had much, if any MSG. Love it.

The pho came with a small plate of vegetables like mint, saw tooth coriander and Vietnamese chili pepper like the way they are served in Vietnam. 

Oh... be careful with that Vietnamese green chili. They look mild and pale, and don't feel spicy in the mouth. But, they burn in the stomach and I thought they were going to burn through me when I had it in Vietnam some 20 years ago. Today, I thought I was going to go through that same hell again but fortunately averted it by having just one slice of that devilish green chili 🀒

Next, we had a bowl of pho with medium rare beef. I love the same savoury beefy soup and the smooth slurpy soft rice noodles.

The medium rare beef was soft tender with a mild beefy sweetness. Delicious.

Beef ball add on - it was cut and served in a clover shape. Tender spongy minced beef with savoury beefy taste.

Pro tip: Next time, I shall customise my pho bowl with medium rare sliced beef and add on tendon and beef ball to make up my own "signature" $10 serving. I'll skip the tough and chewy beef brisket slices.


We enjoyed our simple meal at Star Pho Le. It felt little different from the random pho shops I stepped into in Ho Chi Minh City, so in that sense it is as authentically Vietnamese as it gets in Singapore to me.

Star Pho Le is opened by the same folks behind Star Baguette. Banh Mi isn't in Star Pho's menu but when we requested to have baguette and Vietnamese coffee, the staff indulged us (by delivering it to SP). We enjoyed Star Baguette's banh mi and coffee too. Will visit SB next time and share with you our experience.
