The stall opens at 7:30am, so it is a good hearty breakfast spot in the heart of the city, if you like this kind of traditional humble food (like I do).
Why is the stall called Kelantan Kway Chap?
Because, Berseh Food Centre is at Kelantan Lane 😄 Boss Helen and her husband founded the stall in early 2000, slightly over 20 years ago.
Everything was prepared at the tiny stall.
They have pig head, skin, offal, and blood as well as tofu, braised eggs, etc.
All these for SGD$5.50 - 50 cents for the kway and $5 for the chap. Great value in today's market.
I told lady boss Helen, I don't want taupok and hard boiled egg.
I love the skin here because it was well cleaned of fat and hair. It was tender firm yet slightly chewy to the bite, not those mushy soft over stewed kind. Savoury and spice flavours were slight.
The large intestines were thoroughly cleaned and cut into soft ribbons. The intestines had little own taste while the infused soy sauce and Chinese spices flavours were mild.
Strips of lean meat and fat cut from the pig head. Precious to unkers who appreciate its nostalgic savoury taste and soft tender feel.

Savoury spicy hot sour chili sauce to help cut through the meat and grease.
The necessary carb to complement the braised pork offal.
They really fry their own shallot so the aroma and umami flavours infused the soup. (None of that tasteless and dead as wood chip factory supplied nonsense which has become normalised in Singapore.)

The kway picked up the soup which added savoury, Chinese spice flavours and aroma to the thin sweet sheets of rice.
So much satisfaction. A hearty, tasty breakfast everyone can afford for a great start to the day. Generally mild soy and Chinese spice flavours with very well cleaned pork meat, skin and offal.
