Tian Nan Xing Minced Pork Noodle at Kaki Bukit 511 Market & Food Centre (in Bedok) is the only one of the clan that won a coveted place in the Michelin guide Bib Gourmand list.
I ordered the smallest SGD$5 serving. I was a little ahead of opening time (5pm) but lady boss was very helpful, obliging and friendly.
It was a clutch of slender noodles, two wantons and two pork balls in pork bone soup. Garnished with a bit of fried shallot and pork lard.
The pork soup was mostly clear with some coagulates. It was mildly savoury sweet but didn't have much, if any umami flavour from tee poh.
The noodles were done soft tender. Not much flavour as the soup was mild tasting.
Minced pork in the soup added sweet savouriness and soft tender texture to the dish.
The wantons were tiny knobs of minced lean and fat pork in an envelope of wheat dough sheet.
The fillings were nicely sweet savoury but also didn't have much or any tee poh in the minced pork (I can't taste much umami).
The two pork balls were generic factory type but they tasted savoury and nice.
Soupy type bak chor mee is one of my favourite Singapore hawker dishes. Tian Nan Xing's rendition is relatively mild tasting. Personally, I like my soupy bak chor mee to have more pronounced tee poh umami flavour and more robust fried shallot aroma. More lard would be good too.
