Hi Wan kway teow kia 海皇粿条仔 is very popular among the local and Singaporean suppering crowd in JB - several friends have offered to visit Hi Wan with me ;-D Hi Wan operates from 5:30pm to 3:00am everyday.

Hi Wan is now run by second generation owner, Ah Xiang 啊祥 with his team of workers.

Ah Xiang 啊祥 and his siblings have been helping their parents at Hi Wan's road side kuey teow kia stall since they were children.

Today, customers can choose to sit inside the simply furnished, very clean, air conditioned interior. We sat here because I needed the bright lights for photography.

Most customers still prefer to sit outside for that evening sidewalk eating experience. Afterall, it's actually quite cooling and breezy at night.

The food is kept warm in warming trays at the front of the shop.

There were also these Teochew style braised ducks. (JB is also known as "Little Swatow" as most local Chinese are Teochews.)

Inform the well trained staff what you want to eat and he will cut up your pick for you.

Our simple order at Hi Wan 海皇 (for two of us) - this was the last stop of our day-long food hunt since dawn.

Overall, I like Hi Wan's kuey teow kia. The ingredients were fresh, well cleaned, nicely prepared and reasonably priced. The flavour is on the slightly salty side for my taste buds but my friends like this more robust taste.

The kway teow noodles were tender and smooth (though generic and slightly thick). The medium bodied lightly herbal savoury broth had light peppery notes.

Spongy soft large intestines.

Small intestines stuffed with smaller intestines. (Something I've not seen in Singapore so far.)

Bouncy braised pig skin - I must have.

Braised pork trotters. Just the right texture with mild savoury sweet flavour.

Nice pickled cabbage - well balanced and mildly tangy, sweet and savoury flavours with good crunch. Very appetising.

Craving for kia teow kia pass midnight in JB? Now you know where to go :-D
