Just had this unique Chicken Cutlet Noodle ηΊ’ηŽ―ζ‹›η‰ŒιΈ‘ζŽ’ι’ for lunch at RedRing Treasures in Food Republic at Wisma Atria in Orchard Road, Singapore. We liked it πŸ˜ƒπŸ˜‹

The egg noodles were heavy and relatively dense. It was done soft al dente with a nice soft crunch to the bite.

The egg noodles were served with a quite robust savoury spicy sauce which we enjoyed.

The springy egg noodles and savoury spicy sauce already put RedRing Treasures on par with the top band of Singapore wanton mee stalls but the best part is their signature chicken cutlet.

The flat slab of chicken leg is wrapped in a light and crispy savoury batter. The chicken meat is tender and infused with savoury sweet flavour from overnight marination. The fried cutlet was not greasy.

It's delicious.

The basic Chicken Cutlet Noodle set costs S$5.90. Adding just S$1, we get another slab of fried chicken cutlet. I think that's a great deal πŸ˜ƒ

We were at RedRing Treasures' Food Republic (Wisma Atria) outlet. They have two more outlets - one in Toa Payoh and another in Ngee Ann Polytechnic. New outlets are in the pipeline - one in Takashimaya and the next one in City Square.

RedRing Treasures have come a long way from it's rather humble beginnings by initially reluctant hawkers.

Owner David Chan was a veteran engineer but was retrenched when the factory closed down. He then switched to driving a taxi for a living.

It was David's son Roy who came up with the idea of starting a hawker stall. Roy, a chemical engineer now on a PhD programme in Stanford University is passionate about food. With Roy's encouragement and support, David and wife Esther started RedRing Wanton Mee at Holland Drive.

The little stall in Holland Drive turned out to be a success selling their popular wanton noodles. The Chans have closed the Holland Drive stall, but that 4 year stint have provided them with the know how and confidence to launch RedRing Treasures - a much more ambitious venture. It's a remarkable achievement considering that none of the Chans have any prior F & B background at all. Speaking with David, all they had was a vision, meticulous planning, acumen, discipline, indefatigable determination and true grit to see it through.

Besides Chicken Cutlet Noodle which is their claim to fame, RedRing Treasures also serves several other dishes which they created.

If you are a pork lover, you can eat your noodles with fried pork cutlet instead.

Or, eat your noodles with fried sotong (squid) with salted egg yolk batter. (You can also opt for rice instead of egg noodles.)

πŸ‘‰ I like RedRing Treasure's Chicken Cutlet Noodle - I enjoyed the crispy tender flavoursome cutlet, crunchy noodles and robust savoury spicy sauce. Next time, I shall add another chicken cutlet (for S$1) as one is definitely never enough πŸ˜ƒ
