I stumbled upon these bronzed beauties at the Hong Kong Street Zhen Ji ้ฆ™ๆธฏ่ก—็่จ˜ at Blk 158 Ang Mo Kio Avenue 4. But, I already had two other food stalls in mind this morning, so I just snapped this picture to remind myself to come back another day.

On my way home, with a full stomach after an unsuccessful food hunt, I crossed path with these beautiful birdies again. As I stopped, and looked and wondered if I should have another meal, someone shouted out "่€็‰ˆ! ไธ‰็ข—! Boss! Three bowls!"

So, I stopped and watched the boss cooked the noodles for his regular customers. Seeing how meticulously Mr Tay cooks his noodles, I decided to go for it (anyway, just as well, as I have a habit of forgetting to come back to the potential good food stalls I stumbled upon ๐Ÿ˜‚ ).

Mr Tay looked skilful with the noodles and I don't want to miss out on a potential good food find ๐Ÿ˜„

This set costs SGD3 which I thought was very reasonable pricing.

There was a substantial amount of chicken on the noodles. The soya sauce flavour and aroma were mild and I could taste the natural chicken sweetness in its smooth tender flesh.

This soya sauce chicken is equal to the best that I have eaten in Singapore such as Liao Fan (before they got a Michelin Star) and old timer favourites Chew Kee and Chiew Kee. In fact, I prefer this no signboard stall as I like its gentler well balanced flavours.

I was quite blown away by the texture of these egg noodles.

We can get something similar at premium noodle houses at SGD8++ to SGD12++ with 7% GST and 10% service charge. But at a hawker stall, this is the best I've tasted at SGD3 nett with the chicken included.

The egg noodles have an excellent soft crunchy mouth feel, what the Cantonese aptly called ็ˆฝๅฃ translated roughly "orgasmic pleasure in the mouth".

When I asked Mr Tay why his egg noodles are so crunchy. Does he use any "special noodles"? "No" said Mr Tay. Just ordinary (generic) noodles. The crunchiness is due to his technique which he mastered after years of practise.

(Meaning, if someone else does the cooking, you will get a different experience ๐Ÿ˜‚ )

The noodles were tossed in a robust savoury spicy sauce with sweet undertones - the kind of robust tasting sauce popular in Singapore.

There were even several pieces of crispy lard cracklings.

The sauce was a little too strong for my taste as it overwhelmed most of the delicate flavours in the egg noodles and also the chicken.

It would be perfect for me, if Mr Tay also has a version that uses only ้ฆ™ๆฒน aromatic oil so that I could taste the natural egg noodle and chicken flavours while enjoying their texture.

The soup is real, made with chicken, not MSG nonsense.

I asked Mr Tay how come he is so good with soya sauce chicken ๐Ÿ˜„ Mr Tay is actually the owner of this corner coffee shop. This stall used to be the curry puff stall but it went vacant a month ago. So, Mr Tay decided to use the stall to sell soya sauce chicken noodles ๆฒน้›ž้ข.

Before running this Hong Kong Zhen Ji outlet, Mr Tay ran the very popular Gourmet Corner roast meat stall at Philips Street. Soya sauce chicken noodles ๆฒน้›ž้ข was one of the popular dishes he served at that stall.

If you like soya chicken and crunchy egg noodles, better come fast to Blk 158 Hong Kong Street Zhen Ji. We don't know what are Mr Tay's plans for this no signboard stall. Maybe, he will continue since the response is good. Or, he may just close it once he found another tenant. Who knows.

Quickly eat first, lah ๐Ÿ˜„
