The humble Nanyang kopi that perked up generations of Singaporeans and Malaysians is beating a slow but steady retreat. It is not winning over much of the Millennial Generation but equally worrying, raising costs and labour crunch have led to a dwindling of old school Nanyang kopi shops that do things the old way. That's sad because traditional Nanyang kopi is a unique way of drinking coffee found only in Singapore and Malaysia.
There are still a few places in Singapore where I can go for my traditional Nanyang coffee fix. The coffee stall at Malaysia Boleh! food court in Jurong Point shopping centre is one of them.
Malaysia Boleh! is an air conditioned food court in a shopping centre in Singapore, yet we can get a cup of Kopi O for just S$1. (That's actually cheaper than at many no aircon kopitiams or hawker centres.)
More importantly, Malaysia Boleh! still makes its Nanyang coffee the old way - with long neck kettles and coffee socks. Not with hot drink dispensers, or worst..... made with 3-in-1 instant coffee (omigawd! what blasphemy ๐ญ).
At Malaysia Boleh! Fresh coffee grinds are allowed to steep in a pot of hot water for at least 5 minutes to fully extract the flavours and aromas.
Malaysia Boleh! food court get their ground coffee from Kim Guan Guan, one of Singapore's top traditional coffee roasters.
The resulting black brew is transferred to a long neck kettle, sieved through a coffee sock and served piping hot in a cup.
And, here's one more vital thing. Making a good kopi brew takes skill and years of experience. Ah Yun ้ฟ้ฒ is a kopi master ๅๅก้ ญๆ for over 15 years. Not many coffee joints can boast a kopi master (hence, resorting to hot drink dispensers or instant coffee).
Traditional Nanyang coffee which are made with Robusta, Liberica or a blend of both, has a nice kopi aroma fresh out of the pot (though not as much as Arabica which is used in Starbucks and the like).
But, good old Nanyang kopi has body, tastes bitter and slightly ashy (due to corn etc), and most importantly, packs the biggest caffeine punch for the buck (or cents in the old days).
Share with you a lobang - from Mondays to Fridays, 3:00pm to 5:00pm, a cup of kopi costs 50 cents at Malaysia Boleh! (the good old days are back ๐ ).
