Oishii Duck Egg Zha Jiang Mian @ Tim Sum Boy Johor Jaya 炸醬麵



Nakamasa san has been exploring Johor food and tipped me off to Oishii 炸醬麵 (zha jiang mian) in Tim Sum Boy kopitiam in Taman Johor Jaya. Nakamasa san is thrilled that Oishii's zha jiang mian tastes authentic and that the owner's Japanese master taught him to use only good and proper ingredients 😃



Tim Sum Boy kopitiam is located at the intersection of Jalan Dedap 11 and Dedap 13, together with popular Hong Kong Boy kopitiam.



It's a hive of activity at this popular eating place from morning till night. This is where Johor Jaya locals come to eat as there are many varieties of food here.



Oishii is a little stall inside Tim Sum Boy kopitiam.



Oishii zha jiang mian is run by Jeff and Sharon. Jeff is from Sitiawan while Sharon is from Kampar, Perak. Sharon used to run a chicken rice business just outside UTAR in Kampar. Her stall was popular with UTAR students.

Zha jiang mian is a comfort dish from northern China similar to Singapore bak chor mee (which probably derived from zha jiang mian).



Sharon makes her noodles with wheat flour and duck eggs for more flavour and body. She rolls and cuts the noodles only when there is an order, so all the noodles are served fresh.



As this was my first time at Oishii, I tried their standard zha jiang mian. This is also what Nakamasa san recommended.



Oishii also has mala spicy noodles 麻辣面, chili noodles 辣椒面, and mushroom bak chor noodles 香菇肉碎面 which I shall try next time. I like spicy food 😄

The menu is displayed on the stall and Jeff recommends his various noodles enthusiastically.



On the generous mound of noodles, there were minced pork stir fried with bean paste 炸醬, a heap of julienned cucumber, and a few pork lard cracklings.



Zha jiang 炸醬 is a thick sauce of bean paste, minced pork and mashed tofu. It has a savoury sweet flavour.



Tossing, turning and folding the noodles in the zha jiang wraps the strands in savoury sweet flavours.

The noodles were cut into narrow ribbons and were relatively thick. They were tender and have a squeaky springy mouthfeel. We get this feeling from chewing cheese curd but rarely from noodles. Try it, if you are curious.

The julienned cucumber was crunchy and gave off a green taste which I am not a fan of (but, I know many people like the taste of raw cucumber). The julienned cucumber was also wet, letting the green taste spread to the noodles 😱

But still, I like the noodles because of the squeaky mouthfeel.



The noodle set comes with a bowl of soup with pork balls, fish roll, fish cake and fresh leafy lettuce.



The tea colour soup was sweet from boiling mang kuang (yam bean) and soy bean. I especially like the tender juicy pork ball that has bits of crunchy black fungus embedded in the lean and fat minced pork.



👉 What I like about Oishii is their duck egg noodles with the squeaky mouthfeel. The zha jiang mian is OK but I think I will like the mala spicy and chili noodles even more as I like my noodles to have lots of heat.
