Bolonia Spanish All Day Tapas Bar & Restaurant @ Republic Plaza, Singapore

Bolonia is a Spanish restaurant conveniently located at the ground floor of Republic Plaza at Exit D of Raffles MRT station.

Finding Bolonia can be slightly confusing as Google map doesn't seem to help here. It is right beside Distrii and facing Cecil Street. When you step out of Exit D of Raffles MRT station, turn to your left. Distrii is steps from the exit, and Bolonia is right next to it.

The interior is well appointed, beautifully designed and comfortably furnished, yet retains a certain welcoming, casual, relaxing laid back feel. It's a place I can hangout in.

This is the view of Bolonia's al fresco section at Cecil Street from inside the restaurant.

Bolonia has a well stocked bar of wines and liquor but my company today were cocktail and mocktail folks 🤷

Not sure what cocktail or mocktail my friend was enjoying 🤭

Since no one in today's group wants wine, I settled for an espresso with liquor. Nice 😁

Our starter Heirloom Tomato Salad.

Sweet heirloom tomato, pipparra peppers (Basque pickle), almond brittle, balsamic vinaigrette. I enjoyed the fresh, crisp vegetables and love that nutty sweet almond brittle 😁

Delicious savoury, thick creamy roasted onion soup served with toasted garlic praline bread.

Calamari Fritos.

This crispy fried calamari with lemon aioli was nicely crisp, chewy and tender but a bit too much like fried sotong which was exactly what it was except for the aioli (garlic & olive oil) sauce 🤭

Ham Croquetas.

Deep fried roll of creamy bechemel sauce (butter, milk, flour, olive oil) mixed with bits of umami savoury Iberico ham.

Potato Bravas.

Crispy Fried Potatoes with Aioli & Spicy Sauce. It's exactly what the menu says it is 🤭

Secreto Iberico Pork.

Secreto Iberico Pork, Trinxat, Chutney and Pork Jus.

Trinxat is a delicious Andorran hash made potato, cabbage, bacon, garlic, olive oil and salt.

The Secreto Iberico Pork was very nicely done. The outside was browned and tasted slightly savoury salty while inside, the strip of meat was moist, tender, and tasting, smelling porcine sweet.

Baked Stoned Seabass with Ikura Cream and Salsa Verde.

Not sure what "stoned" means here but the thick slab of fish was baked, then nicely seared to crisp and brown the outside. It was delicious, especially as the inside was moist, tender and had fish sweetness.

Chicken & Seafood Paella.

Baked rice with chicken, Argentinian prawn and live clams.

Although I like my paella to have kick butt level of umami, I enjoyed this more moderate intensity rendition because I like the interesting mix of crisp, tender, chewy, and even bits of gritty in the rice. I asked the staff to help me scraped the last grains into my plate 🤭

Bolonia Burnt Cheesecake.

Made with Manchego (sheep) cheese, cream cheese set on feuilletine base with mixed berries compôte at the side.

I am a fan of Basque style cheesecake as it is creamier, softer, less sour and slightly sweeter than their New York counterparts.

I enjoyed today's meal. Compared to most Spanish restaurants, the intensity of savoury salty flavours was slightly less robust. Personally for Spanish, I like the more intense flavours better.

Come and give Bolonia a try - they have Christmas and high tea sets
