I vaguely know that there is a pizza kiosk opposite Pura Brasa the famous Spanish restaurant in Tanjong Pagar. Today, I found out that they make excellent pizza Romana or Rome style pizza π and focaccia.
The mastro behind L'Arte Pizza & Focaccia was in Singapore for a short visit to his Singapore team.
Pizza master Radostin Kiryazov is a master pizza instructor in Italy and judges pizza making competitions around the world. He was judging a competition in Hong Kong before hopping over to Singapore before his next overseas engagement. People is jet setting pizza celebrity π€©
Lord of the Rings. The Pizza Fellowship.
They call chef Rado the "Bulgarian God of Pizza". Among his credentials was winning the World Pizza Competition in 2018.
Chef Rado lives in Sofia, the capital of Bulgaria where he has three Italian restaurants. While away, L'Arte is in the good hands of local staff like ι©δΈ½ι’ who hails from Johor Bahru, Malaysia.
Before becoming a pizzaiolo under the tutelage of mastro chef Rado, δΈ½ι’ already laid her foundation in the pastry kitchens of Toast Box, Lavender, Polar, Bakerzin, and others.
L'Arte's dough are made with fine Italian flour, rested for 48 hours, and freshly hand kneaded.
Chef Rado is a master artisan, artist and innovator. In his restaurants in Sofia, he adds Bulgarian touches to his Italian dishes.
At L'Arte Pizza & Focaccia, chef Rado adds Asian twists to the Italian classics.
We tried the just launched Pizza Mala Burrata. This was the Romana style pizza.
It's creamy savoury Burrata cheese, generous tomato sauce, cherry tomatoes, olive oil and lettuce dusted with a light sprinkle of mala powder on a pizza Romana base.
It's hot air. I mean hot air raised and formed large air pockets in the bread which made it light, airy, tender inside with a crispy crust outside, making a chewy whole in the mouth. I love this bread.
I love the contrasting yet balanced blend of umami savoury, tangy sweet with micro touches of subtle green bitter and the unmistakable tingle of spicy Chinese peppercorn mala heat.
We also had this "Contemporary pizza" version of Pizza Mala Burrata which reminded me of New York / Neapolitan style.
I love the thick as rope, crisp, chewy cornicione (rim) with cardboard thin soft base of the New York / Neapolitan style.
We also had the Korean inspired Pizza Gochucang.
Pizza Romana topped with tomato sauce, cheese, and gochucang sauce peppered with sesame seed and dressed with fresh lettuce.
Savoury, sweet, spicy flavours from red chili, glutinous rice, and fermented soy bean over tangy sweet fresh tomato sauce and savoury cheese.
It's like appetiser and main course combined - pick up one and unable to stop ππ€£
Besides the newly introduced mala and gochucang creations, L'Arte still serve their reliable stable of popular Italian classics.
When I crave a good pizza in Singapore, I know I can rely on L'Arte.
