Fuzhou Noodles at Ah Chong in Johor Jaya JB 亚春面之家 ⭐⭐⭐⭐✱
This morning, I joined buddy John at one of his favourite haunts in Taman Johor Jaya for Hock Chiew noodles at Ah Chong stall. John hails from Setiawan (Perak state) where most Chinese there are Hock Chiew - Ah Chong stall is where John gets his Foochow or Fuzhou comfort food.

Ah Chong stall is at the hawker centre along Jalan Dedap 20 at Taman Johor Jaya's commercial hub. The food centre which has about 20+ food stalls is bright, clean and breezy.
Ah Chong stall serves Foochow lor mee, Foochow noodles, Foochow fishball soup and (on Sat and Sun only) Foochow red wine mee sua. There is also wanton noodle with char siew or braised chicken claws and laksa to cater for people here for other than Fuzhou specialities.
Stall holder Mr Aik 葉 came to Johor Bahru from Setiawan and set up his stall here 10 years ago. Mr Aik has a coffee shop stall in Setiawan before the opportunity in Johor Jaya hawker centre brought him to JB.
This is my first time tasting this Foochow egg noodle dish known as 福州蛋燕.
There's thin slices of lean char siew.
There's wanton which were smooth, soft and tastily sweet.
The twist is in the egg noodles, where 福州蛋燕 is made with eggs and tapioca flour (instead of wheat flour).
The mouth feel of Fuzhou egg noodles is light and bouncy. The egg noodles do not have much flavour in itself, but they have a sweetness from the soup clinging to the thick strands.
The sweetness in the broth comes from boiling lots of large pork socket bones in water.
We also had Hock Chiew lor mee 福州鹵麵 where the Foochow egg noodles, wanton and char siew were buried in a dark gooey thicken broth.
I like the lor (thicken broth) in this Hock Chiew lor mee. It's mildly savoury with a slight tang from vinegar and is nicely balanced with sweetness from the cabbages in the bone broth. It is delicious and I would love to come back for this lor mee soon.
We must, of course, also try Ah Chong stall's Foochow fish balls.
The ivory white Foochow fish balls served in clear bone broth were huge.
Oh.. I love this. The thick fish meat wraps a little knob of tender minced pork. The sweetness of the fish paste, complements the sweetness of the minced pork. The fish paste's bounciness to the bite contrasts the softness of the minced pork.
4-Star Though I have not been to Setiawan (Perak state) and so cannot compare with the Hock Chiew food there, I love what is available here at Ah Chong in Johor Jaya. I like the mild and balanced natural flavours of Ah Chong's Fuzhou noodles, lor mee and fish balls.
(I need to return to Ah Chong for their red wine mee sua which is available only on Sat and Sun.)

Delicious! There is no large pic on that bowl of dry version noodles. Those dry version on dark soya sauce should be tasty, not easy to find in Singapore, I think.

DeleteThanks Johor Kaki! Hockchew/Fuzhou food is not easy to find in Singapore and outside of Yong Peng and Sitiawan!
