Recently (Nov 2016), Johor Bahru foodie circles were abuzz with excitement about the good news that the Jalan Ah Siang Teochew noodle stall has resumed business after a 5 year hiatus. I wanted to try this famous Teochew noodle since I started Johor Kaki blog but never thought that I would have a chance since the boss has retired in 2011.

Teochew noodle is the JB equivalent of Singapore's bak chor mee, and is loved in the same passionate way.
The most representative Teochew noodle in JB is by Lao Tee 老弟 established in the 1950s in old downtown Johor Bahru.
Uncle Tan Keng Ngiap 陈敬业
Lao Tee had passed on and his legacy is kept alive in 2 stalls now:
- One, shop at Jalan Sutera (Taman Sentosa) still bearing Lao Tee's name by his grandson 👈 click
- Two, Yook Mooi Teochew Mee Pok stall by Uncle Seng's former helper at Jalan Lumba Kuda
There were two other stalls ran by Lao Tee's disciples:
- One, at Sang Heng kopitiam at Jalan Tan Hiok Nee by Lao Tee's nephew Ah Seng 👈 click (Note: Uncle Seng passed on in Dec 2016)
- Two, this stall at Scientex Taman Mutiara Emas by Uncle Tan Keng Ngiap 陈敬业 who was one of Lao Tee's staff. Uncle Tan had been selling Teochew noodles for over 50 years before retiring in 2011. Uncle Tan's old stall was known as Ah Ngiap kway teow to his fans (Note: Uncle Tan passed on in Jun 2022)
We started with a mee pok dry (RM6) and a mee kia dry (RM6).
The Lao Tee style of Teochew noodle is served with a blend of soy sauce, vinegar, lard and chili paste (not so different from Singapore's dry bak chor mee). There is blanched minced pork, fish cake slices, hand made fish balls, pork balls, small prawns, fried shallot and chopped scallion.
The noodles are done soft al dente with just a little spring to the bite. The sauce is quite mild as it is the local preference. Between the mee pok and mee kia, I prefer the latter for Teochew mee. The tossing sauce is relatively mild, so I get more flavour with mee kia with more sauce clinging to the strands.
The hand made fish balls made with fresh yellow tail fish meat are dense with a good springy firm bite. The fish balls have a subtle fresh fish sweetness. The tiny prawns known as 硬壳 or "hard shell" from Pontian were tender and flavoursome. The pork balls though factory made were quite sweet with slight porky flavour. The lard cracklings add porcine taste to the noodles.
Lao Tee's style of clear broth is mildly flavoured but it has layers of savouriness from anchovies, pork socket bone and prawn shells. It's delicious.
Then, we tried the soup version of Teochew mee with kway teow (RM6). The mildly flavoured subtly savoury soup allowed us to taste the natural flavours of the fresh fish balls, pork balls, fresh prawns and minced pork.
We love the soup Teochew mee. In fact, we love it the most and ordered a second bowl to enjoy 😃
4-Star (out of 5). The soup version of Uncle Tan's noodles is one of the best Teochew noodle in Johor Bahru. Long time fans of Lao Tee said that Uncle Tan's Teochew noodles are faithful to the original Lao Tee taste. This stall is a Must Try to taste one of JB's heritage food icons.

Its definitely one of my favourite noodles stall. First had them when he was located opposite the old JB CIQ. He had a partner than and besides noodles they also had Teochew braised duck, taufu before moving to Jalan Ah Siang. Good comfort food.
