Chef Lup Roasted 立师父烧腊 | 505 Beach Rd, stall B1-56, Singapore 199583 (Golden Mile Food Centre basement level) 🚅 10 minutes walk from Lavender station or Nicoll station ☎ 9022 8496 ⏰ 10am - 3pm (Weds off)
Foodie buddy Marcus alerted me to Chef Lup Roasted a few months ago. Then, he travelled, I travelled, a couple of failed attempts to try Chef Lup, and months went by before I finally got to try his roasts today.

Marcus was still overseas, so I went to Chef Lup alone this morning.

The youthful looking chef Lup has 15 years of roasting under his belt, including 8 years as the executive chef of Hong Kong's Kam Roast's overseas chains.

Chef Lup roasts all his meats at the tiny basement hawker stall at Golden Mile Food Centre.

Honied juice drip, saliva flow 🤤

The early birds waited, some here 30 minutes before opening time while others tabao-ed (takeaway) like a dozen+ boxes 😅

I had char siew and roast duck over oiled rice....,

....and since I already queued 来都来了 tabao-ed char siew as well.

I didn't specify any cuts, but chef Lup gave me my preferred half fat, half lean cut 半肥瘦, as if he could tell what I liked just by the way I looked and spoke 🤭 👴

The char siew meat and fat were juicy soft tender, porcine sweet and mildly savoury. The gummy, caramelised, slightly charred outside provided a more robust sweet savoury flavour. Together, the half fat lean morsel was rich with complex sweet and savoury flavours.

Add in the moderately sweet, savoury greased rice and the mouthful of roast and rice became a balanced, enjoyable treat.

It's restaurant level quality but we are at a hawker centre. Thanks chef Lup!

The roast duck - I did said I wanted breast.

The juicy, tender meat was cut chunky. No fat under the skin which was beautifully golden brown but not crisp. The meat's savoury flavour was somewhat mild and there was no duck gaminess. Personally, I like my duck to have more robust savoury and spice / herb flavours with at least a subtle gaminess.

The soup though not the main show was no sloth. It had a pleasant complex blend of savoury sweet tangy flavours from preserved vegetables, etc., in the soup.

I did not try the siew yok or roast pork as I was alone. Stole this picture with permission from another customer 🤭 Shall be back for the siew yok soon.

Chili and ginger spicy sauce with zesty lime. For your information, though I normally eat my roasts without sauce. No need to "cut the fat" as it didn't bother me I love it.

OK finally followed up Marcus' recommendation. Good one bro!
