Sien's Kitchen • Guangxi Taste Chicken Rice 阿贤厨房•廣西味淋滑鷄 | 1&2, Jalan Kilang Nenas, Taman Sutera Utama, 81300 Skudai, Johor ⏰ 7:30am - 12 noon (Thurs off)
Tried one of the three chicken rice stalls at Pah Li Ban (in Skudai), my regular JB breakfast haunt for over a decade.

Sien's Kitchen Guangxi Taste Chicken stall 阿贤厨房•廣西味淋滑鷄 has been here for about a year. Ready to serve at 7:30am and sold out by lunch (Thurs off).

It's one of the food stalls outside Kedai Kopi Gao Deng 高登咖啡店, one of four or five coffee shops on this row at Pah Li Ban.

Yeah, Pah Li Ban village is like a little food hub where locals go to for breakfast and brunch. I love the kampung / village atmosphere here.

Placed my order and sit back, relak one corner with my kopi c kosong. Won't ask for more in life. I am happy.

Lost track of time, didn't felt long before the chicken arrived at my table 🙏 Yeah, hawker stalls in Malaysia still have restaurant style table service, yet have no service charge.

I ordered lower quarter 下庄 with rice and it came with sauces and soup. Price RM20 or slightly more than SG$6.

The poached chicken came sitting in a pool of watery brown colour sauce, dressed with bits of fried garlic and fresh coriander.

The set came with a dish of sauces. A savoury spicy hot chili sauce.

Then, a kind of relish of scallion, coriander, fried crushed ginger and soy sauce in oil. This relish is known as nam. It is this relish or nam 唸 that sets the Guangxi style of chicken rice apart and they call it 味唸鸡 literally "nam taste chicken".

Just like there are many different variations of chili and ginger sauces for Singapore style chicken rice, there are many versions of relish nam for Guangxi style chicken rice.

Boss Ah Meng (but everyone calls him Sien) said this is his maternal grandma's recipe for relish.

Another variation in Johor of the Guangxi taste relish is at Kampung Ungku Mohsin. Haven't been back since way back in 2013 (not sure if they still serve chicken rice today).

Either splash the relish on the chicken or use it as a dip.

Sien's chicken was smooth, soft-tender and moist with a subtle squeaky bite. The flesh tasted very subtly of chicky sweetness, a bit more from the skin and fat.

The savoury sweet sauce, fried garlic bits and the Guangxi style relish added a little bit of fried ginger bitter and heat, and fragrance from aromatics.

Everyone have their own choice of favourite chicken part. This is my favourite 🤭 I like the structure and ratio of skin, fat and meat in this part. Tender, juicy, and full of flavour.

Many people like the "oyster".

What's your favourite part?

I poured the relish 唸 nam over the rice as well. By itself, the rice was nice - just the right tender bite and moistness, not greasy. Gentle chicky flavour infused in the tender grains.

Rolling in the relish added additional savoury flavours and aromatics into the already nice rice.

The simple clear chicken and vegetable soup (cabbage) completes the dish.

A nice chicken rice for your chicken rice day, if you are in Skudai. Very satisfying, filling meal for me.

Guangxi people love their chicken as much as their compatriots in Guangdong. Hope to visit Guangxi and taste the chicken there to broaden by chicken rice horizon 🙏

I took bus T30 from JB Sentral to this bus stop at Kuo Kuang School along Skudai Highway. Ticket price RM2.40, travel time 30 minutes in smooth traffic.

From Kuo Kuang School, I walked about 500 metres along Jalan Kilang Nenas to Pah Li Ban village.

To return to JB Sentral, I went back to Kuo Kuang School and crossed Skudai Highway (using the pedestrian bridge) to take bus T30.

Fare was RM2.40 one way. Travel time about 30 minutes with smooth traffic.
