Seven days in Guangzhou, with mostly food on the agenda. Some hits, some miss, not every meal was satisfying - of course, right?
Turns out, our first dinner of the trip at 𠮩𠹌私房菜 was a memorable one. It's in Shunde 顺德 district, the food capital of Guangdong Province. Guangzhou city is the administrative capital 🤭
Once pass the entrance / doorway, view and choose your live seafood and vegetables at the foyer.
These bamboo clams sticking their necks out caught my eye 👁️
So, they got invited to our table 😂 🤭
细圣子(姜冲局) RMB132. At first sight, I thought these were goose intestines - dream too much about eating goose before this trip 😆
Anyway, these were bamboo clams stir fried with ginger, scallion and sauce.
"Simple" cooking and it exemplifies one of the principles of Cantonese cuisine - quick preparation to bring out or elevate the best in good quality, fresh ingredients.
Wooh! This was so good. Juicy, crunchy, velvet smooth, bursting with umami savoury flavours with aromatic accents from the ginger and scallion.
带子(蒜蓉粉丝蒸) RMB88. I have no natural inclination towards scallops. Maybe because some places in Singapore and Malaysia throw average quality ones into soups and noodles to upsell their dishes.
But, 𠮩𠹌私房菜's rendition was marvellous. The meaty clam was gently crunchy and its natural umami sweetness complemented by a savoury sweet sauce. I am changing my mind about scallops.
钵仔焗禾虫 RMB158. Baked rice worms (ragworm) 😮 I am not sure how or why we had this worm dish 🤔 Who ordered one hah?
It's not marine sand worm which is crunchy (I like, sort of), but this rice worm was like earthworm or maggot which was soft. Tastes mildly savoury with some sweetness. Honestly doesn't taste bad but it was the only dish we couldn't finish that night. Perhaps, it was just us, not yet acquiring the taste for it.
This rice worm dish is a Shunde icon. So, we ain't adventurous enough foodies after all 🤭
家乡让鲮鱼 RMB88. This was one of the most memorable dish of the day..., no, the entire seven day trip. It's dace fish stuffed with its own meat, fried and served with a thicken savoury sauce.
Let me explain a little.
Flesh is scrapped from the dace fish. Bones removed and the skin is carefully kept intact like a glove. The fish meat is grounded and ingredients like water chestnut and dried tangerine peel are added into the mix. This mixture is stuffed back into the fish skin "glove", fried and served blanketed in a thick, mildly savoury fermented black bean sauce.
The filling was soft tender, sweet savoury with hints of dried tangerine peel fragrance. I love this dish.
银杏胡椒猪肚汤 RMB198. This pork stomach soup is a winner🥇 I like this more than any pork stomach soup I ever had so far in Singapore and Malaysia.
It's a popular dish at 𠮩𠹌私房菜, so they have many pots on steamy hot standby 😂
The soup was made with pork socket bones, pork stomach, carrot, ginkgo nut, fig, etc., in a clay soup pot over charcoal.
The soup was milky white, viscous, smooth, rich, just gently savoury sweet peppery, not greasy. I had two bowls, others indulged in three 🤭
𠮩𠹌招牌烧鹅 RMB90. We had a lot of goose during this trip. I like the one here by 𠮩𠹌私房菜.
Served in big meaty chunks. The golden brown gleaming skin was thin but crackly. The thin skin was saturated with juice and bursts with pleasant savoury flavour and aroma with every crackly bite. Packs the same flavours and crispness as good roast suckling pig skin.
The meaty chunks were tender, moist, gently savoury sweet with a goose type of subtle milky sweet taste.
Unlike in Hong Kong where they dip their roast goose in plum sauce, here in Shunde, the sauce for the goose is drippings from roasting.
沙拉冰草 RMB55. Ice vegetable with mayonnaise dressing. Fleshy juicy sweet leaves with a sweet savoury tangy sauce.
姜撞奶 RMB14. Water buffalo milk with ginger for dessert.
When water buffalo milk meets ginger juice it coagulates into a soft creamy pudding which tastes dairy sweet with a gentle ginger taste and heat.

This dinner at 𠮩𠹌私房菜 was one of the highlights of our seven day foodie trip to Guangzhou & Shunde.
For our seven day foodie trip, our total shared food bill came to SGD200 per pax for the entire trip. There were six of us, and we also paid for our driver / guide's share as we invited him to join us during meals.
