Goose is not sold in Singapore, so when we visited Guangzhou & Shunde recently, goose was high on our bucket list.
Goose is ubiquitous in Guangzhou and Shunde. Most restaurants in Guangzhou and Shunde have goose on their menu, but not all were goose specialists, so we just ordered goose along with other dishes.
Our first goose stop, at Liaonengguan Private Kitchen 𠮩𠹌私房菜 in Shunde district of Foshan city. (Liaonengguan has many other delicious dishes and it is a good eating place. I will write a separate article on Liaonengguan.)
The meat was tender, moist, and had a pleasant type of subtle goose gaminess. The skin was thin but crisp and rich with savoury seasoning flavours. The goose skin flavour and texture reminded me of good roasted suckling pig skin but thinner.
Over here in Shunde, they dip their goose in rich gravy from roasting the bird instead of plum sauce 酸梅酱.
I like the roast goose at Liaonengguan 𠮩𠹌私房菜.
Second goose at De Yun Ju 德云居饭馆 which is fish specialist.
Though roast goose was not the main event at De Yun Ju 德云居饭馆, it was likeable. Meat was moist, tender, with subtle goose flavour. The skin was crisp though not crackly, and was savoury flavourful.
Cannot complain but I won't come here for just goose. De Yun Ju is a large fish specialist and worth considering for fish dishes. I will write a separate article on De Yun Ju.
Our third goose at 鹅公村 which is a goose specialist. I like the roast goose here, despite it being a touristy place.
Nice meaty well seasoned bird with moist tender flavourful flesh wrapped in soft slightly crisp well browned skin. The goose came doused in savoury rich gravy.
At 鹅公村, we also had goose soup. Have it if you must have soup, the vegetable sweetness and seasoning flavours dominated the tasty soup i.e. you can't really make out the goose flavours. We enjoyed the soup though.
Didn't try the goose meat as we assumed it had given up all its flavours to the soup.
Fourth goose at 同福酒家 in Shawan Ancient Town.
As good as most, though not particularly memorable. This is not a goose specialist. It has many dishes, including the highly promoted 爬金山 Climb Gold Hill dish. Touristy place.
After four roast goose, we reached roast goose ad nauseam, so we tried a different preparation.
火焰醉鹅 is a chopped up goose, stir fried in their own secret sauce, then doused with a bottle of rice wine, flambéd, then simmered / stewed covered for about 25 minutes.
The boney pieces of chopped goose were chewy, quite tough, tasted mainly of the savoury sweet sauce with a subtle bit of residual rice wine tangy sweetness. Still smoother than duck but any goose flavour was overwhelmed by the sauce and cooking wine.
None of us could recall having a full piece of goose meat without bone, nor a piece of breast meat.
When we were almost done with the goose meat, stock and vegetables were added to make a stew dish. I like this part of the meal partly because I needed lots of roughage for the trip. The vegetables were delicious and the goose pieces were softer by now.
