In Guangzhou, besides poached there are many other chicken preparations (roast, fried, etc), including salt baked. 醉贤居 is one of the most popular local places for salt baked chicken.

I was mind blown by my first taste of salt baked chicken as a child. The memory is still vivid in my mind, so I have a deep love of salt baked chicken.

This is the kind of dining experience I willingly to fly hours for. I am told that in Guangdong (and around China) there are many such village type eating places 乡村私房菜. I would love to come back for itineraries made up entirely of eateries like 金登饭店 Jindeng Village Restaurant. You know...., others cafe or bar hop, I love village restaurant hopping.

Well...., we didn't plan to come here. We actually wanted to have pork kidney at the famous Tiande 天德 but were turned away on arrival because their kidneys were sold out (even before opening for dinner service 🙄🥹 ).

During our Foshan 佛山 food trip, one of the highlights was Juhao Food restaurant 聚豪酒家. The dishes (we tasted many) were good to excellent, and I was amazed by the scale of the enterprise as well as the inspiring story of the boss, chef Feng Zanbo 冯赞波.

Kaki kaki Clarence had a memorable experience with Chef Xu Jingye 徐涇業 during his last visit to Foshan in 2018. Chef Xu, protégé of Cantonese master Chen Daben* went on to win many accolades including the Black Pearl Young Chef Award. 

Now based in Shanghai, chef Xu's 102 House Restaurant at the House of Roosevelt at The Bund in Shanghai is Michelin 2-Starred ☆☆ and in Asia's 50 Best Restaurants 2025 list.

Go Go Jiangsu China • My Personal Journey of Discovery

Jiangsu province is one of my favourites places to visit in China. Slightly more than 102,000sq km, Jiangsu is the third smallest Chinese province but the fourth most populous with around 85 million people. (To put things in perspective, Peninsula Malaysia is 131,000sq km in size with population 20 million.)

Jiangsu province has the highest Per Capita GDP among China's 34 provinces at USD22,500.

If you are a prawn noodle lover (many Singaporeans are), when you are in Xiamen, Fujian, you may wish to try out the prawn noodle there. It's the OG (original) - mother of Singapore prawn noodles.

You will find a strong resemblance between the prawn noodle of Xiamen and Singapore / Malaysia. I find such overseas connections and the insights they provide on our own cuisine, most fascinating. That's one of the things I constantly look out for when travelling.

Our local Shunde guide brought us to 陈村德云居 Chencun Deyunju for their signature Sliced Fish in Hotpot 顺德无骨鱼 using 正宗水库大鱼 Big Head Carp fish.

By the time we cleared formalities and got onto our waiting coach at Baiyun Airport, we were already famished 😅

We dashed straight for Shunde (a district of Foshan city in Guangdong).

When in Guangzhou or Shunde right... If not going for street food stalls, then the natural choice for breakfast would be yum cha i.e. morning tea. So, we had several yum cha sessions during our seven day Guangzhou & Shunde food tour. Of these, I like Xiang Yun Sha in Shunde the most.

As a wanton noodle lover, one of the things I look forward to was to taste the "authentic" Cantonese food icon in China's Guangdong province, the home of the dish.

But, when I was in Guangzhou city, I didn't see any shop with the Wanton Noodle 云吞面 signage. I did, however, come across a few Bamboo Noodle shops 竹升面. What we call wanton noodle around the world, is mostly known as bamboo noodle in Guangzhou.

The one word answer is diversity. 

Guangdong has diversity of food ingredients and a melting pot of many different culinary traditions. 

*Guangdong cuisine 粤菜 is the cuisine of Guangdong Province which includes Cantonese cuisine, Hakka cuisine and the cuisine of Chaoshan (Teochew), etc. This article is about Cantonese cuisine 广府菜, the cuisine of the Pearl River Delta which includes the cities of Guangzhou, Hong Kong and Macau.
