Tun Aminah Braised Duck & Kway Teow Kia (Shang Ji) 上记(皇后)卤鸭粿條仔 +6012 763 8409

There are four 上记 duck stalls in Johor Bahru run by four Lim brothers and their families. 

上记 at Jalan Lumba Kuda was one of my first posts in Johor Kaki blog. There's another 上记 at Taman Johor, and one at Jalan Meldrum but that brother had retired.

This stall at Taman Ungku Tun Aminah is by the eldest Lim brother.

This 上记(皇后) runs from 6am to 8pm on two shifts. Uncle Lim's wife and their daughter-in-law run the day shift while uncle Lim comes in in the afternoon till night.

上记(皇后) is a traditional Teochew braise stall in that they have duck, and also pork skin, belly, offal, intestine, snout, ears, tongue, etc.

Nowadays, I like to eat my duck with porridge but the closest thing 上记(皇后) has was kway teow soup.


Freshly fried shallot. As I said many times before, hawkers who fry their own shallots are my heroes. They could so easily just buy bags of factory fried supposedly-shallots (many do) but they wouldn't. It's a praiseworthy conscious choice.

Generic kway teow kia. Yeah in JB, kway teow is often kway teow kia, the narrower kind of kway teow.

上记(皇后)'s soup is a winner. Sweet savoury lardy with round body.

The aromatic fried shallot added their signature layer of smell and taste to the soup.

Once the soup is nice, the noodles will be nice too as it picks up the flavours from the soup.


I ordered duck and was served mostly breast by default. That's great as breast is my favourite cut of Teochew braised duck.

It was sliced thin with a sliver of fatty skin on top, the way I like it. The infused flavour of the braising stock and natural duck taste are concentrated in this thin strip.

That's all camera shy Ah Han can give me when I asked her to smile for the camera 🤭

She has mastered the cutting skill of uncle Lim, the eldest of the 上记 brothers.

The breast meat didn't have much moistness, but I wouldn't call it dry - it was chewy yet tender. Slight savoury sweet taste from the braising stock.

I like it especially when paired with the kway teow kia in soup.

I also had braised pig tongue. A bit stiff with mild savoury flavour.

Next time, can also try more pork and offal, and enjoy as kway teow kia. I believe it will be nice too as their soup is good.
