Went down to Bukit Panjang (Singapore) today for errands followed by food spotting the most primitive way - hunting for queues. Spotted this queue at 正味 Duck Rice stall and so stopped to give it a try. 正味 (pronounced Zheng Wei) has no English name but translates roughly as "True Flavours".
Ordered my usual at duck rice stalls. A plate of meaty duck breast and plain white rice, which at 正味 is unceremoniously splashed with a watery brown sauce and served with a dark soup. At SGD3, this was good value and apparently one of 正味's draws.
The duck breast came skilfully sliced 好刀工 which I like. 正味 braised their duck through (not pink), so it is slightly stiffer and less juicy (though still tender) than my preferred pink versions. 正味's duck is lean which would please many people though I prefer fat ducks myself.
Flavours were mild though savoury, herbal and natural ducky sweetness were all there and well balanced. The lack of any strong overpowering flavour probably explains 正味's tasty duck's wide appeal. There was no flat saltiness 死咸, pungent gaminess nor overly strong herbal taste 药味 - everything was just nice.
The watery soup was slightly sweet savoury and herbal. It was tasty. I like this.
正味's sambal chili was nice too. Crustacean savouriness, sweet and gently spicy.
I waited and waited for a chance to speak with the stall holders to get to know them better, but never had a chance. The husband and wife team was extremely busy as the queue was never ending at lunch time. (I need to come back again.)

Fuyuan Canshi is just beside the more prominent signboard of Kim San Leng kopitiam.

I usually have their duck kwa tiam mee dry and add braise pork ! nice.

Duck dipped in a fish sauce us always amazing my favourite..
ReplyDeleteThe hawker (especially the female) is super attitude! She will show you black face and suan you when you didn't order properly or have special order (more Chilli). I will never buy from them again. It doesn't mean you have good business then you can forget about being nice to your customers.
