I love simple Teochew fish soup and a good place to get it is Authentic Song Kee Teochew Fish Porridge stall #37 at Newton Hawker Centre.
Authentic Song Kee Teochew Fish Porridge has been here since Newton Food Centre opened in 1977 and has a loyal following. It is actually older, and was established in the 1950s at the famous Gluttons Square (Orchard Road car park) before moving to Newton Food Centre.
Second generation boss Sunny Yio Ging Chua still hand picks his fresh ikan batang fish everyday, hand slices it, and displays the slices on a bed of ice to keep the meat fresh.
The fish is processed into slices, eggs (roe) and fish head. The slices are blanched while the head is deep fried. The fish and head are made into soup (paired with rice) or made into Teochew style porridge. They can also be served with bee hoon (rice vermicelli) and yee meen (fried egg noodle 伊面).
For a while now, my usual is steamy fish soup sans carbs. This for SG$7, the minimum order.
The fish bone soup was clear like boiled water.
But, don't be deceived - it was tastily sweet savoury, the fish bone and anchovy stock infusing well the flavours from aromatics, preserved vegetable (dong chai 冬菜), fried shallot and fresh fish slices. I didn't taste any tee poh (dried sole fish) umami.
The snowy white flesh had a subtle pink hue even when blanched. Boss shaved off most of the skin which would please many people who prefer their fish slices skinless. Me personally, I prefer a bit more skin for a subtle additional layer of texture and flavour. The relatively thick slice of ikan batang fish was soft tender and naturally sweet.
The obligatory green was garden fresh, subtly crunchy.
It like fermented soy bean for its umami savoury flavour and it is good for our gut health.
Authentic Song Kee Teochew Fish Porridge serves a simple, no frills, cleaning tasting dish that stood the test of time since the 1950s (70 years already). Next time, I shall remember to get the fish roe as well. Want to try the fried fish head too.
