My friend Janet and mum recently launched their home based Hokkien style ngoh hiang. I dropped by at their home in Ang Mo Kio to see how the ngoh hiang (pork and prawn rolls) are made and to taste some 😄

Foong's Tyrant Chicken 霸王鸡

My friend Foong has been a banker for over thirty years. Foong also happens to be passionate about cooking. For years, Foong has been baking his "Tyrant" chicken to share with his family and friends.

Through years of experimentation and countless chickens and willing guinea pigs, Foong's baked chicken with his special blend of spices and sauces have earned him many accolades from his friends.

Now that he has retired from banking, Foong's friends have been cheering him on to start a business with his baked "Tyrant" chickens. Foong finally took the plunge partly to meet new friends and mostly to share his passion with more people.

I have tried Foong's "Tyrant" chicken twice when he brought them to the usual haunt to share with the kakis and we ate them along with kopi, teh, or bandung.

Foong said the best way to eat his chicken is to use our hands and fingers. He even provides a couple of limes for cleaning our hands before and after eating.

Our kakis always eat Foong's succulent "Tyrant" chicken hot, tearing it apart with our fingers like hungry lions.

The chicken is tender and the bones slip off the sweet, savoury meat with just a light twist and a tug. Somehow, there is never enough for everyone, so we got to be quick :P

Foong is a jolly good fellow with a good sense of humour. Ask Foong how good is his "Tyrant" chicken and he will tell you that it is so good that it will make "Ji Gong 濟公 " the drunkard beggar monk of Chinese folklore forget his bottle for a while to enjoy "Tyrant" chicken.

Wonderful Chocolate Cakes from Oh My Cakes (Online Bakeshop) in Johor Bahru, Malaysia
I was at a home party and Bryan brought two of his Oh My Cakes (OMC) to the party. Oh my! the OMC chocolate cakes were simply awesome.

I was totally bowled over. The cakes were moist inside and the chocolate ganache was chocolaty, buttery creamy and silky smooth. The ganache's chocolate flavour was full bodied with a lovely bitter sweet taste. The ganache was not overly sweet, which is a common fault of average cakes. OMC chocolate cake is just better than any chocolate cake that I have tried so far, including higher end brand names. No kidding.
As usual, if I liked a food, I will swallow a lump of saliva and boldly approach the boss about his/her story and for permission to photograph them at work.
I asked Bryan if I could photograph him making his delectable creations. Bryan graciously agreed :)
Bryan is a Le Cordon Bleu trained chef who worked a stint in a Sydney fine dining restaurant before returning to JB. Trained in French cuisine, baking is his passion.

I realised that making a tasty, silky smooth and rich ganache required a lot of strength and elbow grease.

Look at Bryan's focus as he crafted his chocolate cake, he looked just like a sculptor creating his work of art.

I was so in love with the Sienna Patisserie's pretty cupcakes that I asked Sienna for a chance to photograph her making her beautiful creations. Sienna graciously invited us over as she was making her Christmas themed cupcakes.
These were some of the Christmas themed cupcakes Sienna made during our visit.

Making these cute and sweet creations takes a lot of concentration, patience and skill, not to mention, an artistic flair and steady hands.


Looking at the amount of effort and time Sienna put into each handcrafted cupcake, I realised that the price of RM2.80 for a baby cupcake is really very reasonable.

Cupcakes at Sienna Patisserie (Online Cake Shop) in Johor Bahru, Malaysia
First, a disclaimer. I am not a fan of cupcakes. The cakes are too sweet, and the cream and candy on top only make cupcakes way, way too sweet for my liking :P But don't take my word for it, I am middle aged, diabetic and male :PBut, cupcakes are so, so pretty and I just can't resist that. They are the sweetest of sweetest eye candy.
So, I tagged along to this tasting session of cupcakes by Sienna Patisserie. Don't ask me how I liked the taste - I was preoccupied with taking these pictures. Ask the ladies in the party who went gu gu and ga ga over the cupcakes and took them away by the (pretty) boxes full :))

Homemade Chocolate Cakes at Chocolicious House in Johor Baru, Malaysia
Chocolicious House was started by an enterprising young couple Yan and Aida early this year.
Word about Chocolicious House's delicious chocolate cakes spread quickly through word of mouth and on the Internet.
The lusciously delicious chocolate cakes were spongy soft, moist and not overly sweet. (I am eating them as I wrote this :) ) They are definitely addictive and people have found them very hard to put down, once they've started.
The little cakes are made using Yan's mum's own recipe. Yan has been watching and helping his mum make cakes at home since he was a child. So, it is little wonder then that Yan is so passionate about his cakes.
Aida too has learnt the fine art from Yan and his mum.

Customers order Chocolicious House's chocolate cakes to enjoy at home, and the large orders are for functions like weddings and corporate events. For functions, Yan put these bite size chocolate cakes in pretty little boxes that make attractive door gifts and souvenirs. Yan has an artistic flair and he painstakingly hand decorates each pretty little box. (I must remember to take a picture of these boxes, next time.)
Yan and Aida are getting more catering orders for functions now as word got around about their delicious cakes in pretty little gift boxes.
Yan and Aida are very enterprising and accommodating to customer requirements. For example, they can set up dessert tables for functions according to customer specifications. Yan and Aida already has plans underway to expand their range of cakes to include baked items. Chocolicious House will also be launching special goodies for the coming Chinese New Year. They plan that far ahead :)
Chocolicious House has orders from JB (of course) and also from as far away as Malacca and KL. Orders have even come from Singapore.
As no preservatives were used in Chocolicious House's cakes, it is best to eat the cakes within 3 days of purchase. Yan and Aida have never heard of any problems with that as Chocolicious cakes are so irresistible, they won't be around for that long anyway.
