Malaysia Boleh! at Jurong Point, Singapore 拉车面 Noodles
I always like homemade and handmade food. It feels satisfying and heart warming to me. So, I was pretty excited when I spotted this lady hand cutting noodles at Malaysia Boleh! food court at Jurong Point in Singapore. In Singapore, where more and more food are generic - mass produced in a factory/ central kitchen, handmade food always gets my attention.
The lady (from Port Dickson, Malaysia) was serving 拉车面 noodles or literally "hand cart noodles". This is not really a nostalgic hawker stall for me as growing up in Singapore, I have not came across any 拉车面 stall before. But the taste, flavour and textures are what many Hokkien families would be familiar with.
拉车面 noodles are Malaysian Hokkien comfort food, brought out from the home to the streets because there is a market for filling and affordable food. Times were hard then, taste was not a primary consideration but the flavours of 拉车面 noodles is already well liked as a Hokkien staple.
At Malaysia Boleh! 拉车面 noodles is still made in pretty much the old way. The dough is made from scratch but rolled with the help of a machine roller.
The sheet of dough is than rolled up and sliced with a chopper, the way it is done at home.
The lady then jiggled the noodles vigorously to loosen them up.

The noodles were kept warm, simmering in the broth.
The thick noodles were soft and tasted of wheat.
The broth has anchovy savouriness and flavours from the greens and fried shallots. It has a slight gumminess from the starch of the noodles.
Nothing pretentious or exquisite, just the comforting taste of home.
If you are a sambal lover, remember to eat your 拉车面 noodles with this. Loaded with chili, hae bee (dried shrimps), shallots and other spices.
SGD2.00 for a comforting hot bowl of old school, hand made noodles in an air conditioned food court in Singapore, is a very good deal :D
