I was invited to visit the newly opened ONE Shabu Shabu Hong Kong Steamboat 壹号锅 in Taman Sentosa by one of it's partners, Ferrence Soon.
Inside ONE Shabu Shabu Hong Kong Steamboat, the layout and décor is simple with neat rows of shabu shabu tables along each sidewall.
The custom made shabu shabu tables each has 4 individual induction hot plates for groups of 4 people. As induction hot plates are flameless, it is possible to have hotpot indoors, with air conditioning.
We start with appetisers and I always enjoyed the interesting starters at Hong Kong style steamboat restaurants.
Fried fish skin is standard fare at Hong Kong style steamboat places. I love savoury, crispy fried fish skin - it's like a thinner form of papadam.
I also like the springy, chewy bite of deep fried octopus tentacles.
This is an unique appetiser made with the cartilage from chicken leg. The cartilage is battered and then deep fried. This is the first time that I have eaten this and I like the crunchy cartilage.
It's like a rubbery, gummy form of fried battered peanuts. Perfect beer food :D
Clockwise: Pork bone with corn broth, Tom yam, Shark bone broth, and an individual induction hot plate.
Unique in Johor Bahru, we have individual personal mini hotpots of broth at ONE Shabu Shabu.
The broth come with free flow of top ups.
This was our sumptuous spread of fresh food and vegetables. We are ready to start.
The freshly hand made meat and fish balls.
The colourful parade of sotong (squid) balls with various bits of vividly coloured diced vegetables mixed into the mashed squid meat.
Large, chunky, snowy white scallops.
Another type of scallops.
Sliced Australia beef.
Sliced pork loin.
Large pork dumplings with shrimp eggs inside that pop in our mouth.
More pork dumplings with water chestnuts, carrots, peas and other vegetables.
A few different types of spongy mushrooms.
The very well presented vegetable and tofu set.
Cooking the various fresh ingredients by dipping and brushing 涮涮 them briefly in the boiling broth is part of the fun of a steamboat meal.
I like this Hong Kong imported century egg with the slightly runny, creamy savoury yolk.
There were many different types of dips and sauces to spice up our food.
For drinks, we opted for boiled carrots, water chestnuts and various vegetables like watercress with honey. It's a tasty, healthy alternative to sugary fizzy drinks and an interesting change from the usual Chinese tea.
If you are a shabu shabu 涮涮锅 fan, ONE Shabu Shabu Hong Kong Steamboat in Taman Sentosa is a new place worth checking out.
