Buddy John wanted to get his Kheng Guan Hiong Pontian kopi fix. While at the coffee shop, the huge white sheet of roti canai / prata dough caught my eye. Experience tells me that the wider and thinner the roti dough is stretched, the nicer the roti prata will be.
Wide and thin roti dough will have more layers when folded into a roti prata / canai. When fried in oil, the outside will be crispy while the folds inside will remain tenderly soft and chewy - the way I like my roti prata.
So, this time in addition to the usual kaya and butter toasts to go with our favourite coffee, we ordered a few roti kosong (plain bread).
Indeed, the roti was flaky crisp on the outside while moist and tenderly soft chewy inside.
I like it that this roti prata was not greasy at all. The roti had a subtle savoury sweet wheat flavour (like a Jacobs wheat cracker).
The chickpea, carrot and potato dhal was mildly sweet spicy with a dollop of sambal chili to give it a bit more spicy kick.
After enjoying the roti prata, I went to chat with the stall holder. Encik Shahrir has been selling roti canai for 16 years and at Kheng Guan Hiong for half a year.
Encik Shahrir giving the piping hot, freshly fried crispy roti prata a sharp clap just before sending it to the customer. That muffled thump when pieces of fresh hot crispy roti are smacked between the palms of the prata man is music to my ears since my childhood.
Information for you 👉 If you are in JB or Singapore, don't go all the way to Pontian for this roti prata lah.... But, if you are already in Pontian to buy fish or having coffee at Kheng Guan Hiong, Encik Shahrir's roti prata is worth a try.
