✍ 12 Nov 2023. Went to Moxie near Outram Park MRT station to meet Jack over a bottle of Gramona Imperial sparkling wine 🥂

Moxie just opened on 10 Oct 2023 and hasn't done any media launch yet. But, word can spread quickly on the good ol' grapevine too. Moxie is already busy as it is a sibling of Siri House @ Dempsey Hill. Fans of Siri House simply followed Executive Chef Steven Chou and Revenue Director / Operations Manager Jack Taylor Yang to Moxie 😁

Whereas Siri House is known for its modern Chinese fare, Moxie serves modern Mediterranean cuisine.

I was at Moxie to enjoy the Gramona Imperial 2017 Corpinnart on offer at S$120++ a bottle (usual price S$185++) during #EatSpainDrinkSpain 2023 from 15 Oct to 15 Nov 🥂

Gramona Imperial Corpinnat sparkling wine hails from Penedès (southeastern Spain near Barcelona), made with a blend of Xarel·lo, Macabeo, Parellada and Chardonnay grapes, aged for 60 months.

On the nose, Gramona Imperial smells of fruit and spice - of apple and peach, anise and fennel. There's also the subtly toasty, comforting smell of freshly baked bread. 

I am meeting Jack for the first time, and once the Gramona Imperial flowed, words rolled and our conversation grew.

Jack started out in the Singapore Navy at a tender 17. Joined Morton's as a bartender when his Navy contract ran out. Then, switched career to be a diving instructor teaching in dive resorts from Malaysia to Maldives for a decade.

Returned to land F & B, and met his mentor sommelier and winemaker Miquel Sabria Bernaneu when they were both at Olivia Restaurant at Keong Saik Road. Jack then went on to be in the opening team of Siri House @ Dempsey and now, Moxie.

On the palate, the Gramona Imperial is refreshing, full bodied and smooth. Tastes fruity and floral with backdrop of freshly baked bread.

Group Executive Chef Steven Chou is the man leading the kitchen at both Siri House and Moxie. Chef Steven Chou is from Houston, Texas. His high flying career includes flying starts at Two Michelin-starred The Modern at MOMA and Public in New York City. Steven was also culinary director and consultant at Resorts World Genting, amongst a wealth of many roles and positions in his globe spanning career.


Moxie features dishes from the Mediterranean from Iberian, French, Italian, Greek, to Arabian, and even African as represented by its spices. I shall definitely be back to try them.

Meanwhile, today for our Gramona Imperial, we paired it with uber umami anchovy crostini.

The umami savoury saltiness of the pickled anchovy accentuates the refreshing fruitiness of the Gramona Imperial. See I so enjoy 🥂😁
