Though Xing Ji rou cuo mian at 85 Fengshan food centre serves a different style of bak chor mee from the others, it is one of the most famous in Singapore. Xing Ji is one of the very rare bak chor mee stalls that doesn't have a "dry" version and their signature noodle is "mee kia" not "mee pok".
This is actually my second taste of Xing Ji's bak chor mee. The first time, I didn't enjoy it that much and couldn't remember much if anything as my mind "switched off" once I decided not to blog about it.
This second taste? I was stunned.
It was so good, I became so kiasu that I got greedy and immediately ordered a second serving :-D
The generic yellow noodles were cooked al dente with a good springy, slightly firm gummy bite. Yummy.
The tender pork balls (generic factory made) were flavoursome with seasoning and slight porcine taste.
There were a few pork lard crackles buried in the broth and noodles. They were freshly fried - crispy despite soaking in the broth and had that lovely pork crackle flavour which gave the broth that extra kick.
This clear soup which had a visible slick on top looked ordinary and may be slightly intimidating for people who are sensitive about greasy food.
Bak chor mee must of course have bak chor (that defining minced marbled pork of fat and meat).
When the mushy soft minced pork is mixed into the broth......
Kapow!
It's pure evil.
The broth with the minced pork was so good, I couldn't resist ordering another bowl of exactly the same thing, right away.
The cottony minced pork was naturally porcine sweet and the whole broth was just so irresistibly delicious.
Since Xing Ji is in top form today, I better eat more - and so, I rushed off to order another helping :-D
Based on the bak chor mee that I tasted today, Xing Ji very well deserves every one of the numerous accolades that it proudly displays at the stall.
