If you are a Singapore fried Hokkien mee enthusiast, You Fu doesn't need anymore introduction. It's in the media limelight since it started in 2020.

It was earlier in Golden Mile Food Centre and I did a comparison between You Fu and the GMFC stalwart, Hainan Hokkien Mee

Lots went on at You Fu during the last five years and they have expanded to outlets and affiliates across the island now. 


They just launched a $4 budget serving at their Woodlands Crescent outlet. 

So, here I am. 

In this laid back corner of Singapore, traffic is relatively light - I like it this way. 

So, here it is. You Fu's $4 Singapore fried Hokkien mee. It's not a big serving but it is the right size for me. I prefer to be 80% full, than 110% full. 

That said, knowing how much ingredients, rental and labour, etc cost in Singapore, $4 is actually a steal in today's market. As they say about overvalue food, "I don't know how they earn". 

Anyway, I am about to find out how they taste 😁


Everything was there (almost). The wet mound of yellow noodle and thin bee hoon, smothered in a thick sauce (of reduced prawn & pork stock) topped with pork belly, a prawn, squid, egg, chive, sambal, lime, and lard crouton. 

I said "almost" because there was no bean sprout. I am unreasonably OCD about bean sprouts 😬

The noodles and rice vermicelli were soft and cut up, so the best way for me was to scoop them up with a soup spoon. The sauce was mildly savoury lardy umami eggy. It's the right intensity and flavour profile for me for Singapore fried Hokkien mee. Neither overly salty nor eggy. Slightly more crustacean umami would be ideal. 

Can't really discern the wok hey even though there were visible attempts to impart some onto the noodles. 

They were generous with the pork belly and they were nicely done soft, tender and porcine sweet. I like this. 

I was a little surprised that there was squid because the You Fu at Chinatown Complex food centre didn't have squid (and no bean sprout too). 

The singular sliver of squid was tender and subtly sweet. Nice but there was only 1 (o.n.e.) sliver 😂

The lard croutons were crisp but not saturated with grease (a good thing for many people, I believe). Not provided by default but will oblige generously when requested. 

Though I prefer cut chili for Singapore fried Hokkien mee, I like this sambal too. It had a spicy hot sting that hits you full frontal, then followed by umami savouriness of balacan (dried fermented shrimp). 

Anyway, I just used the chili to prime / sensitise my tongue to discern the Hokkien mee's flavours better. Didn't fold the sambal into the noodles as that would rub out all the nuances and layers of flavours in the dish. 

I am happy and satiated 🙏 👍

Oh... I sometimes hear and read people say, photos of empty bowls and plates are quote "disgusting" unquote

I will still post it lah

Because, a few hawkers told me they feel a sense of achievement, validation, joy when customers finished all their food. It's a kind of unspoken positive feedback. 

The converse is true and hit equally hard. 

Some hawkers told me that unfinished food makes them wonder if anything was wrong with their food. One or two hawkers actually told me that they will quietly eat the unfinished food to get to the bottom of why the customer didn't want to finish it. 

There can be many more reasons, many perspectives on this, but after hearing the hawkers out, I instinctively clean up my plates and bowls.

No need to leave any paiseh piece lah. This is one "tradition" I am happy to see disappear. 

(One way to start is not to over order, in the first place.)

    Also, did he say why he switched the name back to YouFu after going with FuZai?

  5. I tried it when they first opened at woodlands, was okay but not really my type, but now at $4 can't really complain ...
