After tasting Do Rae Mee's fried oyster omelette at Makansutra Gluttons Bay, I was eager to try Hup Kee Fried Oyster Omelette at Newton Food Centre.

Chatted with regulars at the queue, including a gentleman who has emigrated to Australia for over 20 years but must come back to Hup Kee whenever he is back in Singapore ๐ช
Make your order, pay, and you will be given a pager.
Return to the stall to collect your food when your pager buzzes.
That's why you won't see a long standing queue at Hup Kee.
Boss Ng Gek Moi ็็ๅฆน and late husband were running Hup Kee since the 1960s. They were one of the original thirty hawkers who relocated from Orchard Road Gluttons Square to Newton Food Centre in the 1970s.
Cooking a good oyster omelette is about control of fire. With decades of experience behind the pan, Ms Ng won't be rushed. She takes the requisite time required to turn out sizzling plates of fried oyster omelette.
Okay lah, we are all comfortably seated at one of the most atmospheric hawker centres in Singapore. The place is full of colour, energy, buzz, the air filled with smoke and heady aromas from the dozens of clanging woks, sizzling pans, and hissing BBQ grills.
I ordered just the smallest SGD$8 serving as this was my second dinner this evening ๐
I also got gout so cannot ๅทๅ (cheat meal) too much oysters ๐คญ
It's a generous amount of food for SGD$8 in my opinion.
Potato starch and egg omelette topped with succulent oysters.
The half dozen oysters were plump, soft, creamy in the mouth, savoury sweetish in flavour. Overlaid with a bit of fish sauce umami.
Enjoyed the juicy oyster with the spicy hot savoury tangy chili sauce.
I like the sweet potato and egg omelette which was crisp and browned outside, while eggy soft moist inside like scrambled eggs. Nice complementary contrasting textures.
Nice old school oyster omelette worth coming back for.
