I always wanted to try traditional Fuzhou kompia made with the tandoor type of charcoal oven, the way they do it in Sitiawan (Perak) and Sibu (Sarawak). So, I was really excited when foodies in JB started sharing about a traditional kompia stall operating in Taman Ungku Tun Aminah (TUTA) in Johor Bahru.

Every time I pass this spot on the Senai Highway, on the way to Kulai, Pulai, Pontian / Kukup or Senai Airport, I always have an internal conversation with myself - shall we pull over to buy some kueh from the stall at Kim Wah kopitiam 金华茶餐室? More often than not, the answer is yes!

Mooncake festival 中秋节 is around the corner and Johor Kaki is on the hunt for the best mooncakes in Johor 😄 Yuen Fatt 源發餅家 in Kluang was introduced to me by Euggin Lim from WGOIJB. Thanks, Euggin!

Today, I went on the 100km journey from Johor Bahru to Kluang in search of Yuen Fatt, one of Johor's most famous mooncakes.


Traditional Chinese Cakes and Biscuits @ GN 满发 Food and Biscuits in Batu Pahat, Johor


GN 满发 Food and Biscuits was a lucky find. After overeating at the food stalls along Jalan Abu Bakar in Batu Pahat, we looked for a traditional Chinese cake and biscuit shop to get the customary gifts before heading home to Singapore.


GN 满发 Food and Biscuits just happened to be opposite Swee Kee tonic soups. We had never heard about GN 满发 before, so we did not set our expectations too high.

The GN 满发 shop looked ordinary enough. The retail section is at the front of the shop and the production section just behind a glass and board partition.

Nevertheless, the finishing touches are done at the retail section, right beside the display shelves.



This large modern oven is also in front at the retail section. So we got our hot cakes and biscuits straight out of the oven J



Stepping behind, the staff were kneading the dough and making the biscuits one at a time by hand, in the old way. Each person quietly focused on their respective part of the production chain.


There was a machine humming and droning away, grinding the aromatic, freshly stir fried sesame seeds.

As we don't know yet what is good at GN 满发, we just bought a random selection to try at home and to present as gifts.

We were pleasantly surprised at the texture and taste of GN 满发 traditional Chinese biscuits. The tasty crust was flaky and among the crispiest we've tasted before. The different types of fillings were thick and generous as well as fresh, smooth and fragrant.

Sweet yam paste. I like.

Five kennel 五仁 paste. Not my taste but the favourite filling of many others.

Not my favourite but others raved about its unique taste.

The next time I am in Batu Pahat, GN 满发 will be the place where I will pick up my customary gifts before heading home.

Traditional Chinese Cakes and Biscuits @ Hua Bee 和美 Bakery in Tangkak, Johor



Hua Bee 和美 traditional bakery is one of the most famous in Tangkak, Johor. It was founded more than 60 years ago by the family matriarch and celebrates its founding every 9th Aug. Today, Hua Bee is run by the 3rd generation carrying on the family tradition.


The production process centres around this large marble slab. It is a family affair - everyone is involved in the production chain. 


Here the water and oil (lard is used here) based doughs are put together. This is the crucial step that produces that signature crispy, flaky 酥 crust of traditional Chinese biscuits. 


The fillings are hand moulded with this pressing device. Look how big the tau sar 豆沙 (red bean paste) fillings are J


This is the last stage of hand moulding the biscuit by the lady boss before sending it to the oven.


This step of brushing the biscuits with a thin coat of beaten eggs is known as "egg wash".

The biscuits are still packed in these quaint old style paper wrappings.




These are some of the goodies we bought. As Hua Bee's biscuits make great, affordable gifts, locals and tourists buy them by the bagfuls. Even Singaporeans order their traditional wedding biscuits all the way here for distribution to relatives and friends back home.

Traditional Chinese Cakes at Tangkak Traditional Bakery in Tangkak, Johor



Jalan Solok in Tangkak is well worth a visit. Along this side street off Jalan Muar, you can find the legendary Kuang Fei Tangkak beef kway teow. And you have on this street, not one, not two, but three traditional Chinese bakeries – every one with no less than 50 years of history each.


This one simply named Tangkak Traditional Bakery is the one furthest from the main street (Jalan Muar).

As always in such set ups, the whole production process is done at the premises and the entire family chips in.

The biscuits are still packed in these quaint traditional paper wrappings – each tube costs RM2.50. For Singaporeans, these reasonably priced traditional biscuits make excellent gifts which are well appreciated as freshly made ones are not easily available in Singapore nowadays.


Freshness of the biscuits is assured because the turnover at this bakery is high as it is popular with locals and tourists who take away by the bagfuls.

Traditional Chinese Cakes at Fu Sean Biscuit Manufacturer in Segamat, Johor



We stumbled upon Fu Sean traditional bakery on our way from Segamat to Muar. We took a wrong turn and had to get down from the car to ask for directions.


The shutters were down at Fu Sean but we peeked inside through a side door and saw a hive of activity. A team of busy workers who were working cheerfully making traditional Chinese biscuits smiled friendlily at us and beckoned us to come in.

The beaming workers jokingly said that they are a 1Malaysia bakery, and indeed, they clearly are. There were Malay, Indian and Chinese workers working merrily together. The atmosphere was definitely cheery even though everyone was busy.

The sight was fascinating and we soon forgot that we were lost and needed to be in Muar. This was too good an opportunity to miss.

We asked for permission to take photos which they happily welcomed and even offered us some samples of their freshly baked cakes and biscuits straight from the oven J

Much of the process of making these traditional old style Chinese biscuits are by hand. The workers sit around a large marble slab, each taking charge of a part of the production chain. They would chit chat as they work and bond like an extended family in a kampung (village) kitchen, cooking for a big event.

The final step was by this rather quiet gentleman who meticulously arranged the dough with fillings onto baking trays. He was also in charge of the baking - constantly watching the temperature and timing - which explained his quiet focus.

We bought a pack of these freshly baked "biskut panjang" - crispy flaky crust with sweet lotus paste fillings.


A pack of "biskut keladi" which are crispy, flaky biscuits with yam fillings.


A pack of these tau sar piah 豆沙饼 or sweet crispy crusts with salty green bean paste fillings.


Fu Sean's main clientele are retailers but they will sell to walk in customers as well. Each pack of a dozen biscuits costs just RM3. This is a good place to get fresh, tasty snacks to take home at very reasonable prices.
