Besides the Michelin Starred Liao Fan Hong Kong Soya Sauce Chicken, there are at least another four, maybe five stalls serving the same dish at Chinatown Food Complex. Most of my foodie kakis swear by Fatty Ox Hong Kong Kitchen 过桥面档. I've eaten a few times at Fatty Ox and I like Cheung sifu's dishes too.
Fatty Ox is located at the quieter outside facing "green section" ringing the sprawling maze-like Chinatown Food Centre. I actually prefer it here as it is brighter, breezier and I like the view of the pretty heritage buildings around me.
The inside section where most of the stalls are, is crowded, dark, stuffy and noisier.
There is a constant line of regulars at Fatty Ox HK Kitchen which has been around for 18 years now. They open at 7:30am and usually wrap up the business day around noon with everything sold out. Monday and Tuesday off.
Fatty Ox's soya sauce chicken are freshly made at the stall. Look at that lovely deep golden brown glaze on the plump bird.
My order of soya sauce chicken with egg noodles for SGD3 (2016 price). Most stalls at Chinatown Food Complex sell this dish at about the same competitive price. This is very good value (considering that Singapore is one of the most expensive cities in the world).
That`s a generous serving of chunky soya sauce chicken dressed with oiled chopped scallion and ginger for SGD3.
The angel hair egg noodles come in a hefty heap too. There was just enough of the blend of savoury sauce to coat the soft al dente noodles with a greasy slick - but, just enough of it and not too much. Just the right level of savouriness and saltiness. There is no fake "oyster sauce" that leaves a tannic feel (siap siap in Hokkien) on the tongue in Fatty Ox's sauce, so that's a plus for me.
All the chunky pieces of soya sauce chicken were smooth, marshmallow tender and juicy, including this thick slice of white chicken breast.
I like it that Fatty Ox's braising sauce is mild and well balanced with layered savouriness and gentle sweetness. I can still taste a bit of lovely natural chicky flavour.
I thoroughly enjoyed Fatty Ox's soya sauce chicken. Next time, I shall take half a bird at least - feeling hungry as I am writing this.
I also love Fatty Ox's house made sambal chili. It's got pronounced crustacean savouriness balanced with mild spiciness. It's excellent with the egg noodles.

Fatty Ox also has a Poon Choi (Big Bowl Feast) 盆菜 for SGD200 which you can have by ordering in advance (Tel: 9638 5345). It's looks good and I am sure to try it out in the future. Will tell you more when I do that later.
3-Star If you are deterred by the 2-hour plus queue at the Michelin Starred Hong Kong soya sauce chicken stall at Chinatown Food Complex, you may want to check out Fatty Ox's version. Many locals prefer Fatty Ox's version for their gentler, more balanced flavours and their kick ass house made sambal chili paste.
