I just wanted a small, simple lunch today by dropping by at Mr Tay's no name stall at Jalan Bunga Ros opposite the Masai bus terminal. Actually, I miss Mr Tay's hor fun which is among my favourites now in Singapore and Johor.
这在马赛车站对面 Jalan Bunga Ros 的无名小档口. 老板很会煮. 每一天都有煮不一样的菜肴来供应食客扪. 各式各样的菜肴都很好吃. 我最喜欢的是老板的炒河粉和白斩鸡. 友们来试试,一定不会失望. 早上到旁晚. 星期二休息.
But, I got side tracked. Mr Tay said he has bak kut teh and kong bak 扣肉 (braised pork belly) today.
Mr. Tay is a versatile and enterprising chef with over 30 years of experience, so he cooks different dishes every day at his stall.
Before I could order my hor fun, Mr Tay brought us his other "specials" of the day - kong bak, poached chicken and char siew.
Without further ado, we launched into our unplanned, unexpectedly huge lunch. We had a chap chai (mixed stewed vegetable) for good measure.
We bumped into Henry who is a regular at Mr Tay's no name stall. Henry is here at least 3 times a week and I know of Mr Tay's stall from him. It's a pleasure to meet Henry and have lunch together.
Mr Tay's bak kut teh broth is light tea coloured. It is gently herbal, with mild porky savouriness and slight pepperiness. It is also not greasy, so it is highly drinkable. The ribs and pork belly were tender (but not soft). The pork has some firmness to the bite and has natural fresh porky sweetness. I especially like the pig intestines as it is soft and flavoursome.
Mr Tay's kong bak has nice, mild layered savouriness. The pork belly is firm, not soft to the bite.
The char siew is slightly sweet and the portions with juicy fat have nice porky type of sweetness.
We love Mr Tay's poached chicken. It's the same quality as chicken at the best chicken rice stalls. The meat is tender and juicy, it has very nice natural chicky sweetness. If you are at Mr Tay's stall and he is serving poached chicken, you Must Order this 😋
Finally, we had Mr Tay's hor fun and it was... wow. Today, besides the usual prawn, pork and fish cake slices, Mr Tay added in some tender chicken breast meat. The wok seared rice ribbon noodles have nice wok hei - a subtle char you can taste and smell. Mr Tay's hor fun sauce is a delightful blend of layered sweetness. The natural chicky sweetness add yet more flavour to the already tasty sauce. Henry has a photo of me happily slurping up the last drops of sauce off that large orange coloured plate 😋
4-Star (out of 5) for Mr Tay's hor fun and poached chicken. Mr Tay makes a lot of different dishes on different days. I am discovering more of Mr Tay's exceptional cooking skills as I return to visit his stall.

Deletewent for breakfast today, we are having bak ku teh, and new implement dishes garlic chicken, is nice. and the lady boss is so nice which she keep on refill the soup for us til we finish our rice. thanks for great recommendation
