Wah Leng Wanton Noodle ABC Market • Another WTM Tiger at ABC Market Hill 华玲云吞面 ☏ 9328 4428

Wah Leng Wanton Noodle 华玲云吞面 | Jalan Bukit Merah, stall #01-117 ABC Brickworks Market & Food Centre, Singapore 150006 🚅 10 minutes walk from Queenstown station ☏ 9328 4428 ⏰ 6am - 2pm (Tues off)
Was at ABC Market last week for an event nearby. Noticed that this wanton mee stall was enjoying a long queue in the territory of media darling Fatty Cheong, which I enjoyed very much too. Long queue in the same small hill as another wanton mee tiger must mean this Wah Leng stall was no small kitten 🤭

Anyway, that day I already squandered my calories and tummy space on other stalls 🙄 Can only blame myself 😔

I marked Wah Leng for a revisit as soon as possible.

So, this morning I got up early to find out why Wah Leng was pulling in the queue - I believe in the wisdom of people who live near the hawker centre.

For noodles, I usually order just the smallest portion to taste - carbs is the enemy of longevity 😬

But, today I ordered the Special which was a large serving with everything in - my intuition and the long wait made me do "silly" things.

I gotta tell you about Wah Leng's winning noodles first.

So excited!

The slender angel hair noodles were very well sauced - there's plenty to coat every strand and then some.

The strands had a nice tender spongy springy crunch. I like its texture as much as One Mouth though the bite and feel were different.

I like their sauce - savoury lardy with a bit of heat (I said yes to chili sauce).

The noodles were studded with lard croutons.

Thank you lard ✋ Thank you lard ✋

The other obligatory things to complete the wanton noodle dish were good too.

The char siew was more than okay but Fatty Cheong still wins by a wide margin in this department, in my opinion.

The young lady gave white hair unker (me) an extra fried wanton to thank me for my patience 🤭🙏 They had to change water and wait for the water to boil just when it was my turn.

I actually appreciate the effort to change to clean boiling water regularly as residual starch increases the boiling point of the water for blanching and tends to overcook the noodles (making it soft and limp). Kudos to the hawkers for the effort to make their noodles as springy and correctly done as they can.

Oh.. the crispy fried wanton was nice lah. So sweet mah... 😉

The Special set also came with wantons and shrimp dumplings in soup.

The soup was good - medium bodied with dried seafood umami savouriness balancing the porcine sweetness.

The shrimp dumpling was nice. Filled with porcine sweet pork and crustacean sweet shrimp. Everything was fresh.

The wanton was good too - smooth wrap and soft tender fresh pork inside.

One of my favourite wanton mee in Singapore now.

I had to fight myself not to order another round straight away.

I still have a mission to put every good hawker on the World Wide Web and time is running out for myself and also I believe hawker culture, the way we know it from our growing up years. Gotta give the time and tummy space to another stall today.
