This was kaki kaki Shirley's Thursday haunt which she shared often on Facebook. She said Thye Hong, and I always assumed it was the popular fishball stall at Ghim Moh food centre which I am also a big fan.
When I asked to join Shirley, she told me that the stall is at Bukit Batok, run by the Ghim Moh uncle's brother's wife and her son, Louis. Louis's father has retired, so it is now a mother and son stall.
Oh.. wow.. that's very interesting!
I never knew Thye Hong fishball had another outlet by the same family. So, I am even more eager to give it a try.
Thye Hong fishball stall is at Kimly kopitiam about 10 minutes' walk from Bukit Batok MRT station.
This was the signboard and menu.
Thye Hong was the stall with the longest queue at this kopitiam (coffee shop).
Louis and mum come to the stall around 4am to handmake the fishballs and fishcakes with fresh yellowtail fish.
Old school mee pok tah ("dry" - noodles with sauce) with fishball. It's like going back to my teens.
I am here for the fishball but this obligatory carb was no sloth too.
The broad noodles were tender with a slightly firm core, giving the strands a gently chewy bite. Nice texture.
The strands were well coated with soy sauce, lard, sambal, vinegar, etc. The blend of umami, savoury, salty, lardy, tangy flavours and spicy taste was robust.
A lot of kick, if you like strong flavours.
I am here more for Thye Hong's fishballs.
Clear pork soup with (I believe) overrun water from making the fishballs and fishcakes.
Oh.... I love those Thye Hong fishballs.
Tionk Tionk soft spongy, light, moist almost juicy, fresh fish sweet, subtly savoury, salty.
They were as good as Louis' uncle's at Ghim Moh.
Truth be told, I was quietly wondering if there would be any dilution of skill and flavours with the generational transition. Fortunately, I wouldn't be able to tell the difference, if I were to blind taste test the Ghim Moh and Bukit Batok stalls.
Shirley said Louis was working at the stall since he was in his early teens. So, he knows the craft (and has a passion for it).
来都来了 🤭 Since already here, I got another round of fishball soup.
This for $4. Come! Come!
I don't know where to get this much food for $4 and this is actually one of the best fishballs in Singapore!
You all faster loh.
There are only a handful of handmade fishball places in Singapore left and this is one of the best ones.
