Enjoying mutton soup or sup kambing at Adam Road Food Centre is one of my fondest food memories. I used to live nearby in the 1980s, and sup kambing at Adam Road was one of our favourite supper hangout, chill out place.
I can't remember much anymore except for the good feelings and friends I was with. There could be two or even three sup kambing stalls, I can't recall exactly.
I remember we (or was it just me 🤭 ) always went for the exotic items like brain, tongue and eyelid (😬).
Anyway, Bahrakath Mutton Soup is the only sup kambing stall left now at Adam Road Food Centre. The stallholder (and my old friend) confirmed that they are the original at Adam Road.
The menu still has brain and tongue but no more the more exotic eye lid. Of course, they have the usual suspects of ribs and tripe (but no tendon).
Today, forty years later, I opted for just mutton ribs 🤭 Age mellows people down?

Can't see much as everything was submerged underneath the soup but I am glad to see that they still fry their own shallots.
The light brownish olive colour soup was thick and heavy, full bodied. It was well spiced and very gently spicy hot. The fried shallot stirred into the thick, almost creamy soup added its savoury flavour and aroma. I recall that the spicy heat was sharper in the past.
I could have sharpen it up a little with a dash of white pepper (provided) but didn't.
There were several pieces of mutton ribs, I counted seven. The ribs were meaty and the meat was fall-of-the-bone tender without being mushy.
The tender meat had a bit of soft chewiness to the bite. I like this texture.
The meat had a bit of gaminess (not much) which I also like but it didn't have the natural sweetness of fresh meat. So, it was a blend of spice and slight gamey taste.
The fresh coriander garnish added its aromatics to my mouthfuls of mutton and spiced soup.
A filling meal for me today, even without the baguette 🥖 to soak up the soup.

I had kambing soup in sembawang eons ago and just cannot find that taste in the kambing soup of these days 😫

ReplyDeleteTony Boey ahh then that’s the one. i like the red tulang at newton and this stall’s green tulang. waiting for some enterprising feller to do an orange coloured tulang so I can complete the traffic light.
ReplyDeleteToday I just went during 5 pm for their meat and tripe soup , their queue is longest in the market cutting across the whole market .. sold out everything around 6 pm
