Indian style mutton soup or sup kambing have long been one of my favourite street food dishes in Singapore and Malaysia. Many people rate Haji M. Abdul Rajak stall in Upper Boon Keng Road, the best in Singapore and I finally got to taste it today ๐Ÿ˜„ My usual sup kambing fix was in Adam Road (1980s till 2000) and nowadays in Johor Bahru ๐Ÿ˜„

Haji M. Abdul Rajak founded the stall in 1955 which is in the third generation now. When I got there, two young gentlemen were preparing the soup for opening at 11:30am.

There's rib, meat, tongue, leg (shank bone), brain for $6.50 per serving (minimum). Then, there's mixed and organ for $10 per serving (minimum). Another 50 cents for French loaf bread.

I wanted mixed organ but they only had tripe that day. So, I got only ribs and tripe in the mix for $10 per serving. We had two servings of ribs and tripe for four of us to share.

The soup had a nice gentle spice aroma. It was thick, just slightly thinner than mee rebus kuah (sauce). There was very little grease ๐Ÿ‘ 

We all liked the mild but complex spice flavour with slight peppery heat. I like the certain freshness and slight mutton gamey taste in the soup. In addition to a secret blend of masala (spices), there's fresh chili pepper, onion, ginger, lemongrass, pandan leaf, leek and coriander in the soup which gave it a certain subtle sweetness, fragrance and fresh taste.

I like it that the tripe was not overly soft - it had a light spongy spring to the bite.

We were delighted with the lamb ribs. They were fall off the bone tender yet had a slight tender chewiness to the bite. (I don't like overly soft meat.)

The mutton was well infused with spice flavour and still had a bit of residual lamb gaminess which I like. I actually like this better than those in Johor Bahru which I remember tend to be on the softer side and not as gamey. (Haven't tasted JB mutton soup for over 2 years due to the Covid-19 pandemic.)

This is the best sup kambing that I have come across in Singapore now. Shall be back for the mixed organs (hope I have better luck next time). If most of the organs are not available, I shall just stick to lamb ribs which are excellent.
