Hokkien mee in Penang (known in Singapore as Penang prawn mee) refers to the umami rich, spicy soupy noodle dish garnished with prawn, pork slices, hard boiled egg, kang kong (water spinach), and fried shallot. The signature soup which defines the dish is made by boiling fried prawn heads, shells and sambal chili together with pork and chicken stock bones.

Before my eco-tourism trip with Tourism Malaysia, I didn't even know that there is a national park in Penang. Taman Negara Pulau Pinang may be Malaysia's smallest national park, but it is just the right size to fit in half a day of fun exploring some of Malaysia's unique natural wonders. It sure makes a visit to Penang more interesting - adding another reason to visit Penang on top of eating, photos with wall murals in Georgetown, shopping, sun worshipping and partying in Batu Ferringhi.

I was wrong about Penang.

I always thought of Penang first as a foodie's paradise. It's all about char kway teow, asam laksa, nasi kandar, orcee durian, tau sar piah, followed by mural art in Georgetown, and clubbing in Batu Ferringhi.

There is little opportunity for sports and exercise beyond queuing for food, so thought this frog in the well 🐸

The Penang style of char kway teow is well loved in Malaysia and Singapore. Personally, the top three things that make a good Penang char kway teow are quality kway teow (rice noodles) infused with a tasty sauce seared in with good wok hei 鑊氣 by skilful frying.

If I must choose the most important one, my vote goes to rice noodles because when the kway teow is bad, even the best wok hei and most special sauce can't do much to save the dish.

Penangites are so lucky with food - thanks to their water quality, Penang (together with Ipoh) makes the best rice noodles in Malaysia.
