A lot of excitement at Westgate Mall this morning 😄

We were at Westgate to witness the launch of Cat & the Fiddle's bold new concept Bake-to-Order Basque Cheesecake. Every cake fresh, straight from the oven at the restaurant to you, customised to your preference.

Chef Daniel Tay in his usual wacky creative way gave the classic Basque cheesecake his unique interpretation and twists.

We were here for a first hand experience.

Aiyoh.... lai liao, lai liao.... The burnt cheesecakes straight from the oven... So hot ♨️

Baked at high temperature, Basque cheesecakes have a well browned caramelised exterior (top).

So yeah, many if not most people in Singapore call Basque cheesecake, "burnt cheesecake".

Basque or burnt cheesecake has conquered the world's palates since it was created in Spain in 1988, and now chef Daniel is giving it a unique Singapore twist at Cat & the Fiddle.

Inside, there's a thick soft fluffy spongy layer and in the centre a creamy molten smooth custardy core.

At Cat & the Fiddle, there are many ways to enjoy Basque cheesecake. Scoop up the molten lava with a soda cracker. The salty cracker balances the sweet tangy lava while its crackly crispness contrasts with the fluid lava.

Don't have to say anymore 🤭

Anyway, Cat & the Fiddle's selling point is we can specify how we like our a la minute cheesecake (more sugar, less sugar, etc) so it can be tuned to the way we like it.

Torch it for a crème brûlée style glazed sugar finish.

Enjoy the cheesecake warm with a scoop of Häagen-Dazs.

Sweet on sweet, warm with ice cold, even I (who is borderline diabetic) couldn't resist it 😬🤭😋

Splash in a shot of perky espresso for Basque cheesecake "affogato" or simply spread the creamy lava over bread.

Besides classic Basque cheesecake, Cat & the Fiddle will also be adding green tea flavour Basque cheesecake and a savoury cheesecake with macaroni and cheese core.

Chef Daniel is stretching boundaries at Cat & the Fiddle and extending our food horizons. That's what he always does 🤣

Sandwich made-to-order, a la minute with crusty outside, soft inside Tuscan Schiacciata bread, filled with choice of turkey ham, honey baked chicken ham, beef pastrami, or smoked salmon with fresh vegetables and olive oil.
