Hawkers Omakase by Maybank & Makansutra 2026 • Dulukala Peranakan • 戚師傅 Chef Chik


Maybank with Makansutra have just launched the world's first Hawkers Omakase. 

Running from 23rd April to 30th June 2026, it is a ground breaking celebration of Singapore hawker culture involving six handpicked hawker stalls across the island. 

Inaugural stalls are Dulukala Peranakan at Jalan Silat by chef Zan and 戚師傅 at Haig Road Food Centre by chef Chik.

The hawker-chefs are masters of their trade. They have a lot more up their sleeves than the dishes on their day-to-day menu. The Maybank-Makansutra Hawker Omakase is a platform for selected hawkers to showcase their no holds barred best dishes.

The dishes are jointly created and curated by the featured hawkers together with KF Seetoh of Makansutra.

Dulukala Peranakan is a stall at Kopi Haus coffee shop at Jalan Silat. Yes, Singapore hawkers operate from neighbourhood coffee shops as well as hawker centres.

Dulukala Peranakan's Hawkers Omakase set features five of chef Dan Ho's personal favourites. Chef Dan is the 3rd generation owner of Dulukala Peranakan which was started by his grandmother.

Crab Shell Bakwan Kepiting. One of my favourite Peranakan dishes.

Pulled fresh crab meat, ground marbled pork, chunky cubes of crunchy water chestnut, etc., stuffed in crab shell soaking in bamboo shoot and vegetable soup.

Chincalok Kacang Botol Prawn Salad.

The humble crunchy wing bean is one of the most underrated vegetables in my opinion. Chef Dan elevated the dish and its flavours with crunchy juicy meaty sweet fresh prawns, umami loaded chincalok, dried fish, zesty fresh lime juice, etc.

Sambal Keluak Penne Stingray.

I like the al dente texture of the penne.

Paired with grilled stingray enveloped in a buah keluak and spice sauce.


Otah Nasi Lemak Crispy Popiah.

Rice cooked in coconut milk, subtly tinted with blue pea flower, combined with fried egg, mashed otak otak, strip of cucumber, peanut, wrapped in popiah skin and deep fried to a browned crisp outside. Eaten with a umami rich salty spicy sambal.

Puff Rice Onde Onde served over Coconut Ice Cream.

I am very, very cautious about sugary food, so approached this ondeh ondeh with some hesitation. Old already mah..., have to watch my sugar intake.

Turns out it was worth the calories and sugar spike. The rice ball was soft tender like a marshmallow coated with shredded coconut pulp and filled with gula Melaka (coconut palm sugar). The melty coconut ice cream was nice too. Puffed rice added crispy crunch to the dessert.

Won't decline, if I was offered a second 🤭

香草奶油蝦配煎腸粉 Seared Cheung Fun with King Prawns and Béchamel Sauce.



This was the ultimate best chee cheong fun or rice roll that I have tasted anywhere between Singapore and Guangzhou.

The tissue thin tender rice roll was wok seared outside, set in buttery creamy béchamel sauce boosted by crustacean umami from the huge prawns.

Umami savoury buttery sweet on sweet rice noodles with wok hey. Win x 3 already lo....

沙姜手撕雞 Ginger-Infused Hand-Pulled Chicken.

This delicious chicken dish spiked with wasabi would be the crowd darling on any normal day but today is Hawkers Omakase at Chef Chik 🫢 Even this nice chicken dish had to vie for our attention 🤣


魚湯花膠浸娃娃菜 Baby Cabbage and Fish Maw in Clear Fish Broth.

Cloudy full bodied viscous soup with deep layers of umami savouriness and sweetness.

Stunning fish maw. 


Such a jaw dropping smooth, soft, gummy ball of umami.

Even exclusive stellar Michelin-starred places would have to stretch themselves to attain this standard - now served at a gritty Singapore hawker stall as part of Maybank - Makansutra Hawkers Omakase.

櫻花蝦欖菜爆龙趸球 Giant Grouper Medallions with Sakura Shrimp.

生煲啫啫豬面肉 Olive Sizzling Claypot Pork Cheek.

魚香茄子炆伊府麵 Braised E-Fu Noodles with Fish-Fragrant Eggplant 

It was a suffocating, blistering hot, humid day - it was a lost cause even for the big S fans overhead trying valiantly but futilely to cool the old hawker centre down. We felt like being slow toasted in an oven.

But, chef Chik's dishes took our minds off where we were to the flavours and artistry of the best chefs of the Pearl River Delta. (No kidding, I just came back from there just hours before visiting chef Chik.)
