Thistle Port Dickson Chinoise Restaurant Chinese New Year Celebration Set 2015

This was my second visit to Chinoise Restaurant at Thistle Port Dickson Resort (Malaysia) at the invitation of Ms Bobby.

Chinoise Restaurant is now much brighter, especially during the day when it is flooded with sunlight from the Malacca Straits, a stone's throw away.

Inside Chinoise, the furnishing is classical elegant Chinese without looking pretentious or overly opulent. It's easy to feel comfortable here. The old style round marble topped tables are perfect for intimate communal dining and bonding.

Chef Lam (far right) whom I met during my first visit is still leading the kitchen here. He has been with Chinoise since the beginning, more than a decade ago.

Chef Lam remains an old school fastidious Chinese chef who does things the old, tedious way. No shortcuts, so Chef Lam's food has that familiar classic flavour. Though well rooted in tradition, Chef Lam presents his food with contemporary flair that is pleasing to the eyes and excites the appetite ;-D

Like every Chinese New Year feast in Southeast Asia, Chinoise's CNY menus start with the traditional colourful Yee Sang with salmon slices (abalone slices also available).

The finely shredded carrot, radish, beetroot, cucumber and other vegetables were tossed with gusto to rousing shouts of 祝你羊年财源滚滚, 生意兴隆, 工作顺利, 生意羊羊得意, 天天喜气羊羊 and other auspicious Chinese New Year greetings and wishes.

The salad was made with very fresh vegetables finely shredded and carefully dehydrated. Refreshing and crunchy with just the right amount of juice, and flavoured with powdered spices, aromatic oil and plum sauce.

Nothing fancy but traditional and very tasty.

The first main dish was steamed chicken with Chinese herbal sauce.

Chef Lam marinated the whole chicken in dark sauce, deep fried it and then braised it in brown herbal sauce till the meat was fall-off-the-bone soft. The chicken flesh was well infused with traditional Chinese herbal flavours and sweetness.

Delicious.

Steamed pomfret fish in superior sauce.

Made with local caught fresh pomfret, Chef Lam keeps this classic simple and nice.

Whole fish is a must have for every Chinese New Year feast as the Chinese word for fish 魚 sounds the same as the Chinese word for "surplus" 餘. So, having whole fish during Chinese New Year signifies having "surplus of wealth and good fortune".

Wok fried prawns with Chef's special sauce.

Fresh good sized prawns fried in Chef Lam's own savoury sweet sauce.

大虾 or live big jumping prawns signify energy, vitality and liveliness.

Braised loh hon vegetables with black mushrooms, black moss and dried oysters.

Chef Lam's version of the traditional Cantonese Chinese New Year auspicious dish. 

Black moss or hair moss is called 髮菜 in Cantonese which sounds like 發財 (fatt choy) which in turn means "greater prosperity and wealth".

The colourful mixed vegetable dish also symbolises harmony and unity.

Fried rice with anchovies.

Very well executed simple dish of steamed rice stir fried with crispy anchovies and meaty shrimps.

Rice symbolises wealth and luck.

Rounding up the feast with a nice sweet dessert signifies good fortune and sweetness to last the whole new year.

Thistle Port Dickson Valentine Dinner - A True Night of Romance at Glass Restaurant

Ms Bobby invited me to visit Thistle Port Dickson Resort (Malaysia) and try out the Valentine Dinner presented by Glass Restaurant.

Chef Rizuan and his team have created a special Valentine dinner named, "A True Night of Romance". The special Valentine dinner costs RM350++ per couple.

Dinner starts with "Romeo's Love Bouquet".

A colourful bouquet of mixed spring salad tossed with shredded crab meat set on eggplant caponata accompanied with a shelled water prawn pan seared in virgin olive oil and served with sweet sour dressing.

Next followed "A Steamy Affair".

It's creamy fresh asparagus soup with house made tortellini pasta filled with chicken and baby leek eaten with toasted garlic bread.

Enjoy house made lime sorbet palate cleanser before the mains.

For the mains, there is a choice of beef, chicken or fish.

For beef eaters, there is the wholesome "Twosome".

Char broiled beef medallions on gratin potato topped with lobster and wild mushroom ragout served with veal jus sauce and balsamic reduction.

The New Zealand tenderloin done medium rare.

Chicken lovers can have the "Miracle of Love".

Stuffed chicken breast with shrimp, mushroom and pistachio served with mashed sweet potato, French beans and roasted capsicum sauce.

Fish lovers can opt for the "Marriage of Land and Sea".

Pan roasted salmon fillet and sea scallop set on parsley, mashed asparagus, topped with fennel pickle, veal jus sauce and a drizzle of black truffle oil.

The "Heart Flutter" shared dessert to set hearts aflutter.

Charming kissing swans accompanied with chocolate velvet cake and served with strawberry coulis.

Dirty Mee LalaZatzat in Lukut, Negri Sembilan 面久拉揸面食

There are two popular shops in the small town of Lukut near Seremban and Port Dickson (Malaysia) run by the Teng 鄧 family, famous for their "dirty noodles" or la zha meen 拉揸面.

La zha meen means "dirty noodles" in Cantonese colloquialism but there is nothing dirty about these delicious noodles at all. People from far and wide travel to taste these "dirty noodles".

During our trip to Port Dickson, when we asked locals at the nearby Lukut town what to eat in their hometown, the first thing that came to their minds was "dirty noodles" 拉渣面.

That sounds very interesting.

Ms Bobby from Thistle Hotels and Resorts invited me to dinner at Chinoise at Thistle Port Dickson Resort. 

Chinoise serves traditional Cantonese and Szechuan specialties.

Inside Chinoise, the decor is well appointed, simple yet elegant. Because it is located inside a resort, there is less of the pressing crowd and rowdiness sometimes seen at popular Chinese restaurants.

Chinoise also sports a spacious breezy al fresco dining area in the patio. I think this is a brilliant idea to take advantage of the sea breeze at this seaside resort. hmmm... steamboat would be great here :D 



Chef Lam is the man behind the scrumptious dishes we tasted at Chinoise Restaurant. Unassuming, Chef Lam has nearly thirty years of culinary experience under his belt. 

Let's take a look at what Chef Lam had for us :D

First up was the deep fried cod fish. The breaded cod fish was bathed in Chef Lam's own blend of "superior sauce".

The well executed golden brown slab of cod was topped with a small cone of diced garlic, ginger, scallions, and fried shallots.

The cod was lightly crispy on the surface and inside, the white meat was tender and moist.

Next up was the traditional poached chicken - one of my favourite dishes :D

The chicken meat was just the right doneness - tender and juicy. I like to enjoy my poached chicken without dips so that I can taste the natural sweet flavours 鸡味 of the meat.

Chef Lam's own special dip was savoury, garlicky spicy, and aromatic, and would be well appreciated by people who like robust sauces with their chicken.

Hong Kong style BBQ lamb cutlets.

Wok fried lamb cutlets coated with a flavourful tacky sweet, savoury and spicy sauce. As I chewed the slightly firm meat, I could still feel the presence of the lovely aroma and flavour of lamb bursting through the thick sweet and spicy sauce - love it.

Classic seafood bean curd. It's a traditional treat of tender bean curd skin wrapping a soft filling made with chopped scallop, mushroom and fish maw doused with a sweet and savoury sauce.

Vietnamese style pan fried prawns. Good sized fresh shelled prawns marinated with local herbs, milk and butter, and fried. Served with slices of lemon and curry leaves for that refreshing tangy note and subtle aromatic touch.

Homemade stewed vegetables with oyster sauce. Simple yet masterfully executed. All the natural colours, flavours, juices and crunchy textures were captured for our enjoyment. The bits of fried dried scallops added savouriness and crispy bite to the soft greens and spongy mushrooms.

Classic Szechuan soup - Chinoise's version was mildly sour and spicy so it can be enjoyed by most people. Lots of soft and silky smooth textures from the tofu, mushrooms, sea cucumber, crab and more.

Chilled peng peh 冰皮 with red beans. Chef Lam's signature dessert of peng peh wrap filled with mashed red beans and lotus seeds. Lovely layers of sweetness, flavours and tenderness.

When you are looking for a nice Chinese meal in a well appointed restaurant in Port Dickson, Chinoise Restaurant at Thistle Port Dickson Resort would be a good choice.
