As a big fan of ramen, I am very happy that a new ramen shop Fukuryu Ramen Dining 福龍日式拉麵 recently opened in Sutera Utama in Johor Bahru (near Sutera Mall).

Fukuryu Ramen Dining is a simple restaurant. Basic furnishings and air conditioned.

Owner-chef Cash Fong hails from a family of wanton noodle makers and sellers in Muar since his grandfather's time. Now his family has wanton noodle businesses in Muar and Kuala Lumpur.

Chef Cash has worked nearly 20 years in Japanese restaurants in Singapore, Kuala Lumpur and Melbourne, and now his own ramen restaurant in Johor Bahru. Chef Cash is passionate about ramen and wants to share ramen appreciation with Johoreans through Fukuryu.

The broth is the soul in a good bowl of ramen - it holds everything together.

At Fukuryu, the broth is made by boiling pork, chicken, vegetables and seaweed for hours - all natural, no MSG or synthetic flavourings. We drank lots of broth today at Fukuryu and didn't feel any MSG thirst at all afterwards.

Best thing is, at Fukuryu we can get top ups of broth (and noodles) with no additional charge.

Chef Cash Fong let us try Fukuryu's signature lobster ramen (RM30 nett).

The medium bodied broth had the natural kind of mildly savoury sweet. I thoroughly enjoyed slurping up the broth to the very last drop.

The noodles were cooked tender al dente which is the local preference. No lye water (kansui 碱水) is used in making the noodles, so there is no alkaline taste. The slurpy straight noodles picked up the broth and it's flavours very well.

The noodles are made to order at Chef Cash's dad's own noodle factory in Kuala Lumpur.

The lobster was local - from Sungai Rengit (Pengarang, Johor). The lobster was meaty - half a tail and fried to a slight crisp outside.

A spicy pork mince which we can add into our bowl of ramen. It tasted great on it's own, like a kind of spicy pork sambal balacan.

Another Fukuryu Ramen signature - the Ebi Ramen (RM18 nett).

Comes with a good size tiger prawn which was also fried.

The medium bodied savoury sweet broth is spiced up with "red oil" made by frying King Flower Prawns (tiger prawns). The "red oil" added an addictive crustacean flavour to the already delicious basic pork and chicken broth.

Love this savoury, sweet, spicy aromatic broth.

We had no more room for noodles, so I asked for just chashu for tasting. Oh my.... I love Fukuryu's chashu. It has the right balance of fat and lean meat with the right tenderness and moistness. The chashu gave off a nice porcine aroma and flavour when we bite into the juicy slice.

Judging by the chashu, Fukuryu's chashu ramen (either miso, shoyu or tonkatsu) should be satisfying for pork lovers.

So, pork lovers, this is for you us!

Another customer's shoyu ramen order.

The tea coloured soup looked so good that I could not resist asking Chef Cash for a taste of the broth.

To the same stock, Cash added a dash of chashu drippings giving the broth a layered savouriness. I shall try Fukuryu's shoyu ramen next time.

Besides ramen, Fukuryu also serves several side dishes.

Tori Karaage (crispy fried chicken) RM10.

Gyoza RM8.

Age Gyoza RM8.

Now ramen fans have a place for good ramen in Johor Bahru. I shall be back for more (especially for the broth and charshu :-D ).

    1. Dear Eccles, Thank you for taking time to comment. Every eating place has hits and misses. I feel their chashu is especially strong. The broth is very good too. I will be trying out more to pick out more of the hits here. Appreciate much.

    3. Thank you. I feel a broth is good when the savoury and sweet flavours are well balanced and when it is made with natural ingredients with no MSG added.

Please help me locate other good ramen shops in Johor Bahru.

      Appreciate much.

  3. Just had dinner on 13 May 2016. I ordered the signature lobster ramen, however lobster is very small & not fresh. Soup is claimed as MSG free, but I find it lacking in the flavor department, just a little salty taste. Noodles also look like Maggie noodle. Green tea is tasteless. Low price for Japanese, so do not go with high expectations.
