Kampua Mee Noodle in Zhangzhou, Fujian 原北京路松树干拌面店漳州市

We arrived in Zhangzhou 漳州, the city adjacent west of Xiamen in a cab feeling famished. We were lucky to stumble upon 原北京路松树干拌面店 (literally Original Beijing Road Pine Tree Dry Mix Noodle Shop) within 5 minutes.

Our foodies' sixth sense told us that we had stumbled upon a local gem.

(We found out later that 松树干拌面 is one of the most famous noodle shops of its kind in Fujian province.)

干拌 means dry mix. Sibu, Sarawak has a noodle from Fuzhou, Fujian which is called both 干拌 or 干盘 where the latter means dry plate. I look forward to visiting Sibu, Sarawak soon to understand what is 干拌 or 干盘 in the East Malaysian city.

Customers were spilling onto the five foot way outside the shop. We quickly got into the little restaurant and secured a table.

Table secured, now was the time to find out what the shop actually sells 😂

Singaporeans 🙄

Apparently, it was blanched noodles tossed in sauce 干拌面 served with side dishes similar to braised pork and innards for kway chap, and fish / pork ball in pork soup.

Swee lah (nice!).

I got one bowl of noodles topped with lean pork, pork skin, and tofu.

A second bowl more to my own taste with pork jowl, pork lung and large intestine.

Clear pork soup with pork balls, pork blood curd, and fried tofu. It's the kind of pure and clear pork soup I recall from my primary school tuck shop.

The noodles done soft tender to the bite came with a thick blended sauce of peanut paste, sesame sauce, stewed minced pork, (optional) chili oil, and various savoury sauces. The paste and sauces coated the noodles, imparted nutty, savoury, and subtle sweet flavours to the thick round strands.

We enjoyed the texture and taste of the noodles dry mixed with the blend of sauces and oil.

The braised pork skin was thick, firm but springy crunchy. The firmest braised pig skin that I have tasted but I love it.

Inside the pork blood curd, it was like a savoury watery custard.

I love all these optional add-ons - the savoury sweet flavours were balanced and mild, so I can taste the natural sweetness / flavours of the fresh ingredients.

When you come to Zhangzhou, come to 原北京路松树干拌面店 and join the locals to appreciate Zhangzhou's version of 干拌面.
