There are four 上记 duck stalls in Johor Bahru run by four Lim brothers and their families.

If we go by the number of stalls, the Lim family I believe has the largest braised duck brand in Johor Bahru with 4 stalls under the name 上记. One each at Jalan Lumba Kuda, Old Downtown JB, Taman Ungku Tun Aminah and Taman Johor.

✍ 16 Sep 2023. Buddy Mary just had brunch at Yong Peng Duck Noodles 永平鸭's new shop. They just moved here recently (Mary said opening ceremony bouquets still fresh 💐 ).  I haven't been here at their new location but Mary said the food is still nice. I need to go try myself soon 😋 (Thanks Mary for the update and photo 🙏 )

Thank you my makan kaki Ong for showing me 全記得 at Shang Hai coffee shop in Desa Cemerlang, JB - the little stall serves one the best braised duck that I've tasted in JB and Singapore so far.

Sin Hai Cheng Braised Duck Skudai JB 新山新海珍卤鸭肉面

Sin Hai Cheng is one of the top of my mind old school Teochew braised duck places in Johor. Their braised duck is nice and another attraction here is duck blood curd (duck blood curd is the best and is rarely found even in Johor).

I last came to the famous Skudai Duck Mee four years ago. I am so glad that very little changed at this forty year old braised duck shop in a rustic corner of Johor. The boss, Mr Sea in the customary white singlet of Teochew chefs, greets customers with a hearty welcome when he sees you step into his shop.

I asked my JB friend Mandy what is nice in the Rosmerah area of Taman Johor Jaya. We circled around Rosmerah, Mandy pointing out the various popular shops in the area. 

镇江排骨 Pork Ribs at Star Chef Skudai 星名廚 in Taman Sri Skudai, Johor Bahru, Malaysia


It was a chance meeting with Alex, the boss of Star Chef Skudai restaurant 星名廚 in Taman Sri Skudai.

I was having a late lunch at the famous 822 Super King Duck at Taman Ungku Tun Aminah. Even though it was already 3:00pm, 822 restaurant was still full of customers. So, we did the usual thing in Johor, which was to share a table with a perfect stranger.

When our char siew and siew yok arrived, I started to do what Johor Kaki always does. I was totally absorbed in taking photos of the food and writing down notes about how it tasted.

All this while, Alex the "stranger" with whom we were sharing the table was observing our "odd" behaviour curiously.

When I finally paused and returned back to "reality", Alex introduced himself. We soon had a nice conversation about my blog and my vision about putting every good Johor hawker on the World Wide Web. Alex then shared that he is the owner of Star Chef Skudai restaurant 星名廚 in Taman Sri Skudai and invited us to visit.

As we were between appointments and so had a little bit of spare time, we accepted Alex's gracious invitation and was next at Star Chef Skudai restaurant.


At the well appointed, air conditioned Star Chef Skudai restaurant 星名廚, Alex invited us to try his Chief Chef Chia's signature pork ribs  镇江排骨.

We were hardly hungry as we just had excellent char siew and siew yok at 822 Super King Duck restaurant, yet we managed to polish off Star Chef Skudai's signature 镇江排骨 pork ribs easily :)


The ribs were an interesting blend of flavours and textures making it a memorable taste and bite experience.

The savoury and slightly sweet sauce enveloped a gently crispy, caramelised outer layer.


Sinking my teeth pass the crispy caramelised layer, revealed the moist, juicy and tender meat inside that was naturally sweet.

Just across the road from Star Chef Skudai restaurant is Star Chef Skudai duck which was started more than 20 years ago by Alex's father. Alex offered us some of his braised duck which we initially declined as we were totally stuffed - we had been "find" dining in JB since the morning :)


But with our appetites whetted by Star Chef Skudai's delicious signature pork ribs, we reluctantly picked up the thin slices of braised duck. Well, we couldn't stop after that until the whole plate of braised duck was gone :) After the first bite, we somehow found space in our stomachs for the braised duck :P


We were struck by the tenderness of the braised duck slices and the delicateness of the herbal braising sauce.


The tender duck also had that subtle, distinctive gamey flavour of fresh duck meat. When I asked Alex how to get duck meat so tender and flavourful, he shared that Star Chef Skudai uses only live ducks.

The braised duck came with this special chili sauce which was tangy, and only slightly spicy hot and sweet. The chili sauce complemented and enhanced the taste of  Star Chef Skudai's duck meat very well.
Our stomachs filled, we bid the friendly Wee family good bye and went on to our next stop in "find" dining in Johor.

Star Chef Skudai 星名廚 restaurant has many other interesting dishes which I will be coming back for :)

✍ 5 Dec 2024. Combing the streets of Taman Ungku Tun Aminah / Skudai, I suddenly felt a little famished. Then, I stumbled upon a familiar name, Sin Hai Cheng Duck at Jalan Hang Tuah 40 in Taman Skudai Baru. 

Yes, I hunt for food the most primitive, inefficient way by pounding the pavement myself because I still want the joy of unexpected discoveries on my own. (It's living dangerously because often, it is a waste of time, energy, money and calories 😂 but today is my lucky day in many ways 🕺 )

Shang Ji 上记 Duck Noodle (inside Shangi Ji coffee shop) @ Jalan Lumba Kuda, Johor Bahru, Malaysia


Shang Ji 上记 duck noodle is a famous small stall in Shang Ji coffee shop located at Jalan Lumba Kuda. It is just a stone’s throw from JB Sentral and the JB CIQ (if you are strong enough to throw about 700 metres☻).

 
Shang Ji does a brisk business as soon as it opens at 8.
 

Shang Ji’s regular clientele of braised duck meat and duck innards fans made sure that everything would be sold out before the end of lunch time (at about 2:00pm).


The duck noodle was served with a small bowl of soup and a small dish of freshly grounded chillies.


The yellow noodle itself was rather unremarkable – Shang Ji got them from suppliers. And here’s the thing. What Shang Ji did to those ordinary factory supplied noodles with its braised duck meat and savoury sauce was what kept the stall’s fans coming back for more.


The duck sauce was pleasantly fragrant and full bodied. When the noodles were thoroughly stirred and tossed, the sauce coated the plain noodles with its delicious flavour. It did wonders to the plain noodles. It’s like Cinderella transformed into a princess. Ok, that sounds a bit overstated. I’ll say it was like plain white bread transformed into a delicious treat with top quality kaya (coconut jam spread).
 

 

Of course, the star of this whole show had to be the braised duck meat. The duck meat was cleverly sliced so that there was a thin layer of fat and skin with the lean meat. The 3-layered slice of lean meat, fat and skin was smooth and rich, and had a delightful, subtle smoky flavour. Braised duck meat is sometimes overly salty in other places but at Shang Ji, it tasted of just natural sweetness.


The humble chili sauce too deserves mention. It was made by blending fresh chili, ginger and garlic. Spicy but not stinging hot. The chili sauce complemented the duck and noodles well, and was even good enough on its own (for chili fiends like me). 
 

When we chewed the slice of duck dipped in the chili sauce together with the gravy coated noodles, it created a creamy mouthful that was a marvellously delicious blend of sweet and savoury flavours with spicy hints.


The herbal duck soup that comes with the noodles was light and tasty. Again, unlike the salty brew we sometimes find elsewhere.

This treat of Shang Ji braised duck noodles with soup cost RM5.

I'll be back at Shang Ji duck stall for the duck and also to try out their popular braised pork.
